Meal Prep Edition 6

Hey guys! Happy Hump Day!  Things have finally settled down around here and I have had some time to do some real meal prepping.  I love having just quick go to meals that I can prep quickly, but I do get tired of them sometimes.  The last couple of weeks I have been eating yogurt with fruit for breakfast and ground turkey and steamed veggies for lunch.  I have been buying the frozen steamer veggies.  By doing that, I can have my meals prepped for the week in less than 30 minutes.  But, I was ready for some real meals this week.  more “Meal Prep Edition 6”

Meal Prep Edition 4

Hi Guys!  This week’s meal prep was super easy and quick because I didn’t have a lot of time on Sunday.  We made a quick run to the grocery store and I picked up a few necessities along with some fruits and veggies.  When we got home, I threw together some quick meals and snacks for the week.  I love meal prepping every week because it’s so easy to have everything ready.  But this week it was necessary!  I have been pretty sick the last couple of days and definitely didn’t feel like cooking anything, so it was super easy to just warm up one of these meals and have something hot to eat without having to spend the time prepping, cooking, and cleaning!   more “Meal Prep Edition 4”

Happy Running

Hey Everyone!  I hope you all had a wonderful week!  This was a really busy week for me and I did what I could as far as working out and running.  I just had to be really flexible, and I had a couple of very early mornings!  I still got all of my runs in, but I had to move them around.  I have also been trying to do 2 physical activities each day.  (partly for marathon training, but also for earning points for our wellness challenge at work.)  I did get in 2 activities almost every day, but this week’s weren’t as challenging as last week’s.  This next week should be a lot calmer!  more “Happy Running”

Tex Mex Turkey “Meatloaf”

Hi Friends!  If you haven’t figured it out yet, I LOVE ground turkey!  This is my go-to for everything.  I always have several pounds of it in my freezer!  It’s easy to cook, you can season it so many different ways, and it’s easy to add to anything!  This week I decided that I wanted to spice it up a little bit.  I had a meatloaf in my mind, but when I got to looking at recipes it wasn’t really what I wanted.  So, I just made it how I wanted and crossed my fingers that it would come out okay.  And it did!  It was delicious and I will definitely be making it again.   more “Tex Mex Turkey “Meatloaf””

One Month Down

Hey Guys!  Guess what!  Last week I won the weekly wellness challenge at work!  I got a new foam roller as my prize!   I was really excited!  I ended up with 81 points for the week!  This week’s challenge was still physical activity and the bonus points were still for getting at least 7 hours of sleep each night.  But, there was a new bonus challenge added.  You could earn 5 points for drinking 16oz of water first thing in the morning.  This one was a little challenging for me.  I usually drink water as soon as I wake up, but never that much.  But, I did it each day! more “One Month Down”

How to Make Healthy Choices When Eating Out

Hey Everyone!  Today I want to share some tips with you on how to eat healthy when you eat out.  I love eating at home because I know exactly what I’m fixing.  But, I also enjoy eating out and not having to cook or clean!  When I first started eating healthy, I used to get completely stressed out when going out to eat.  I would avoid it as much as I could.  I would decline invitations from friends and make excuses as I why I couldn’t meet for lunch because I didn’t want to break my routine of healthy eating.  I would think that I’ve been eating so good, I don’t want to go out and blow it on a three course meal.  Thankfully, I finally realized that you can eat out and eat healthy too.  Lots of restaurants offer low calorie or healthy entrée options.  You just have to know what to order.  more “How to Make Healthy Choices When Eating Out”

A One Run Week

Hey Guys!  This was week 2 of my marathon training, and it was pretty much a cross training week.  It was too cold and windy to run outside, and then it snowed.  I know some of you run in the snow and temps when it is negative degrees, and I’m super impressed.  But, I can’t do it.  I will run outside when it’s in the upper 20’s, but anything below that is way too cold for me.  So, I got one run in this week and since I was stuck inside all week, I found other workouts to do.  Here’s a look at my week.   more “A One Run Week”
