Hey guys! If you’re just getting here and haven’t read about the first couple of days of our vacation, you should go back to this post. Today I’m picking up on Day 3 of our vacation in Exuma, Bahamas. Day 3 was a trip off the resort and it was an exceptionally fun day. We went to snorkel a cave where several 007 movies were filmed, and swim with pigs and sharks. We also got to see a lot of the islands surrounding Big Exuma, and had several more stops on the way to and from the cave. Hey Guys!! This isn’t my typical weekly wrap, but I wanted you to know why I’ve been so quiet for a couple of weeks. If you read my last post, you know part of the reason, but the other part is because we have been in the Bahamas!!! Hey Guys! I hope you all had a great weekend and maybe had some Super Bowl fun! We had a very exciting weekend! It was full of friends, food, and lots of fun! We were on the go all weekend and I’ll probably be catching up on sleep all week. I hit snooze this morning for the first time in forever! Hi! This is part two of my week last week. This is all about my weekend getaway at the basketball state tournament! I left off on Thursday night when we went to bed. The rest of the weekend was full of fun, food, and no sleep!! So, here we go. more “Food, Fun, and New Friends – Weekend Recap”
One Christmas down, three more to go!
We began Christmas celebrations this past weekend. Saturday we headed to Norman for a day filled with family, food, and games! Everyone is so spread out, so we rarely get to see some of them.
I got up at 7, so I could get myself and everything that we needed to take ready. I made chicken dip. I made it two ways – ranch chicken and buffalo chicken. I had never made this dip before, so I played around with the seasonings. Basically I used the same ingredients for each dip, with the exception of the buffalo sauce. For the dip I used a 12 oz can of chunk chicken, a dry ranch mix packet, and an 8 ounce block of cream cheese. I mixed all of this together in the mixer, and then I added in about a cup of ranch dressing and probably a tablespoon of cayenne pepper. Then for the buffalo dip, I used all of the same ingredients minus the cayenne pepper. I added about a cup of Frank’s hot sauce instead. It wasn’t too spicy, and it had a good flavor.
We loaded the car, and were on the road by 9. We were having Christmas at Jeremy’s cousin’s house in Norman.
As soon as we got there, I got busy in the kitchen helping prepare the food. I made little smokies, and then just helped with whatever anyone needed. Everyone started arriving around 11, and slowly trickled in. There was at least 40 people there! Once everyone was there, we ate lunch. We had finger foods and we had soooooo much food! There was an enormous assortment of dips and spreads.
There were sausage balls, meatballs, little smokies, and chicken wings.
There was salad, corn salad, pasta salad, bacon wrapped dates, and turkey and asparagus roll-ups. We had ham and cheese sliders, lasagna, garlic bread, shrimp, barbeque baked chicken, and pigs in a blanket.
This kind of food is so filling and a little goes a long ways!
For dessert there were sugar cookies, cakes, lemon bars, pecan bars, and apple pie bars.
There was also so much candy! Jeremy’s aunt makes it all, and it is the BEST candy I have ever eaten! She should seriously sell it!
I was so full when I got done eating. I feel like I snack all day when we do finger foods.
After cleaning everything up, we played dirty Santa. There were 29 people that played and I had number 21!
I was going to steal a Yeti cup, and it would have been frozen, but the person in front of me did. So, I took a chance and opened a present, and I got a box of oranges.
My father-in-law had gotten a Rustic Cuff, and the person after me stole from him, so he took the oranges. I ended up with an Academy gift card, and Jeremy got an Armor All car cleaning set.
When Dirty Santa was over, we played another game called Left Right Center. You start with 3 dollars (or quarters, or chips, or really 3 of anything) and you roll dice.
If you roll a dot, you get to keep your money, but if you roll a L, R, or C you have to pass the money. The last person with money left wins it all. Last year I won when we played with quarters, but I have never won the dollars.
We played a couple of rounds of this, and then we spent the rest of the afternoon visiting with everyone.
Around 6, we set all the food back out so everyone that was still there could eat dinner. I wasn’t very hungry, but I ate some corn salad and turkey and asparagus roll ups. I was miserable after that!
After dinner, everyone left except us and Jeremy’s aunt and uncle. We watched a couple of movies and hung out until around 10. We had so much fun!
We are so blessed to have such a great family and I am so grateful to have all of them in my life!
I love that everyone comes together to celebrate and spend the day together! I enjoyed every minute of the day – laughing, talking, and eating way to much! It went by way too fast, and I wasn’t ready for it to end.

Let me just say this was one eventful weekend! We were on the go all weekend, and it was so much fun! There was Friday night football, hometown festivals, lots of food, and a ton of fun!
We started Friday night with some Friday night football. We went to the local high school game and it was a great game. Our team was behind the entire game and scored a touchdown with 17 seconds left to win the game! I like watching the game, but I also I love hearing the bands and watching the cheerleaders! I just love the whole environment of football games! And especially hometown games where you get to see literally everyone.
Saturday morning we got up early and went to our electric company’s customer appreciation day. We even got a free gift for coming! It is an insulated cup. This will be handy in the winter for hot cocoa.
There was a big stage with entertainment all day. We walked around and looked at the vendors, and we bought a new paring knife.
You can’t ever have too many knives! Jeremy picked it out because he doesn’t like mine, so I hope this means that he’s going to use it. We didn’t stay here very long because it was packed full of people and you could hardly get through. I forgot to take pictures because once we got inside, I got a little overwhelmed with the amount of people that were there, and had such a hard time trying to get through the crowd.
We left there and went to an estate auction near our house. We were just curious about what all they would have; you never know what you might find. But, this one was pretty much full of junk. We stayed for a while because they were auctioning off a brand new fifth wheel travel trailer and we wanted to see how much it would go for. The owner said he paid $104,000 for it, and it sold for $36,000! I couldn’t believe they let it go for that! The owners were downsizing, but I thought it must be sad to watch all of their stuff be sold and for not very much. They didn’t seem to mind though. Jeremy had his eye on that Jeep Cherokee. He wanted it to just drive around town, and now especially up and down our road since it is being redone and is a mess. But, it went for too much.
I really wanted that canoe. Not sure what for, but it looked fun. But, it went for way to much!
After that, we went down town to a festival that was going on. It was full of food trucks, clothing and jewelry vendors, and musicians.
I loved all of these cute signs, but I don’t have a place for them anywhere.
We walked through all the vendors and got some lunch before the bands started.
Jeremy ordered a corn dog for us to share, and was huge!!
He also ordered a cheese on a stick. Which he thought was going to be like a fried cheese stick, and I guess that’s literally what it was. It looked disgusting! I refused to try it, and I didn’t get a picture before he threw it away. It was just a deep fried glob of cheese. Yuck! He tried one bite and tossed it!
My leg was really bothering me, so we sat and listened to the bands all afternoon.
Then Gloriana came on! They were awesome! I liked them before, but after hearing them live, I really like them now!
They really put on a good show. They were energetic and they really interacted with the crowd.
And, I got a picture with Rachel, one of the band’s singers.
When the show was over, we headed down to our favorite Mexican restaurant for dinner. We shared some cheese enchiladas and Jeremy got a taco. The meal came with rice, but neither of us ate it. I was stuffed when we left! We always share food when we go out to eat. This way we don’t eat too much, because portions are always so big!
On the way home, we stopped and rented a movie. We watched Aloha and it was pretty good. I wouldn’t really call it a romantic comedy, so I’m not sure what genre it would fall in. I liked Bradley Cooper and Rachel McAdams. Emma Stone’s character was a little different and awkward. When we got home, I got a picture of the full moon! It was beautiful!
Sunday morning we got up and went to ride the 4 wheelers.
I didn’t make it very long because the bouncing and vibrations hurt my leg. I didn’t think about that before we left. But, it was pretty outside, and I am tired of being in with my leg propped up so I tried to just go slow. Everything is still really green, but I did see a few leaves starting to turn colors!
Afterwards, I went home and propped my leg back up and iced it. I go back to the doctor this week, hopefully something will change! It’s frustrating to not be able to do my normal activities.
Then we went to feed the horse. I tried to get a picture with her, but she was more interested in her food.
And we shot our bows for a little bit. I was pretty proud of my shots. There is only 4 days until bow season opens!
Last night, I made my lunch for today. I’m having a spinach, chicken, and avocado salad with a side of roasted red pepper hummus and carrots and broccoli.
After a weekend of go, go, go, it was finally time to rest. I sat around last night and worked on the computer and watched TV. It was such an awesome weekend!

This week has flown by so fast, I feel like it’s all been a blur! I am completely exhausted and am in desperate need of some rest. I have been hitting snooze all week, and have had to drag myself out of bed. I’m usually awake before the alarm goes off. I guess that’s probably from staying up way too late and getting up way too early. This week it has been at least midnight every night before I have gotten to bed and then I’m up no later than 6. Plus, I have a very hard time sleeping. I haven’t really done anything too interesting, but there are a couple of things that I do want to share with you.
The most exciting thing that I did this week was finding a new yogurt flavor – Dannon Light & Fight Greek yogurt Caramel Apple Pie flavor. IT. IS. AWESOME!! I can’t even begin to describe how good this yogurt is! It was like biting into a piece of apple pie. It seriously tasted just like apple pie, and it had tiny pieces of apples in it. It also had a bit of a cinnamon flavor, which reminded me of a churro. I could eat this for breakfast or dessert! This is my new favorite flavor, I’m obsessed with it. I’m bummed that’s it’s just a limited edition, so I’m going to go this weekend and buy every one of them that I can find. If you like apple pie, you should try it! It is probably the best yogurt I have ever had! ( I really wish they would come out with a pumpkin pie flavor too! )
On Wednesday, all of my family got together to celebrate my mom’s birthday. My grandma made lasagna and salad. I am not a big pasta eater, so I didn’t eat much lasagna, but I did fill up on the salad and fruit.
She had some gigantic black grapes and they were so juicy and sweet. I could have eaten all of them, but I thought I should save some for everyone else. She said she found them at ALDI. I’m going to hunt for those this weekend as well.
We also had cake and homemade ice cream. My grandma bought the cake at the Wal-mart bakery and it smelled and looked really delicious, but it was disgusting. I ate a couple of bites and threw the rest away. It had a ton (literally) of butter cream icing on it, which I am not a fan of. There was more icing than cake.
(As you can probably tell, we don’t have any good grocery stores where I live!)
My mom’s cat is obsessed with my hair! She licks it and tries to eat it. She’s so weird!
The next interesting thing I did was on Thursday. I downloaded the Blogilates app and subscribed to the workout calendar. I did the upper body workout on Thursday and holy cow I was sore on Friday. I guess that’s a good thing! Friday was actually a rest day on the calendar, but I went back and did the lower body workout from Wednesday. It is a challenge, but I like it!
In running news, I got in a 4 mile run last night. It was hard and it was really painful. I think I have finally decided to break down and go to the doctor about my leg. It has been bothering me since March, and I’ve just been stubborn about it. I figured they would only tell me to stop running, so I took off pretty much the whole summer. I only ran one race this summer, and besides that I maybe ran a handful of times. I started back the first of August, and was doing pretty good. I was only going between 3-6 miles at a time but I was really taking it easy. But, in the last couple of weeks the pain has really come back full force! I am getting really frustrated because I can’t run very far or for very long without pain, and now it hurts all the time even when I’m not running. It’s just depressing to not be able to go out and run the miles like I want to, and do it comfortably. I actually cried last night because I was so mad that I couldn’t run further. I keep pushing myself to run through it, but I know that’s dumb. I’ve finally come to the realization that I’m not getting any better, and I’m probably just making it worse by trying to ignore it. So, I am going to call next week to make an appointment to see what’s wrong with it. I’m praying that it isn’t a stress fracture!
I’m planning on relaxing the rest of the weekend. We don’t have any plans, but we’ll see how that goes. It seems like something always comes up.

I had the BEST Labor Day weekend! It was full of family, friends, food, and fun! We were on the go the entire weekend, and didn’t get much sleep, but it was worth it!
Friday afternoon, we went hog hunting! We have been having a ton of them out at our land, and they are scaring off the deer. On the way there, the trailer tire came apart. The tread literally just came right off. So, we had to stop and change it which put us getting to the blind later than we wanted to. But, it worked out okay.
We got in the blind around five. We actually have a trailer that has been transformed into a hunting blind. We thought this one would be safer than a pop up blind in case they came after us.
After we were there for about an hour, a whole bunch of them came out. There were at least 20 pigs. They were so loud!! They kept squealing and fighting with each other. This was the first time I had ever seen a wild hog in person.
Jeremy shot at them, and scared them off. Hopefully this will keep them away. He had to do this a couple of years ago, and they haven’t been back since.
We hurried home and cleaned up and went to the football game. This was the first game of the season, and the stands were packed! We got there at half time, and we stood with some friends on the side of the end zone to watch the rest of the game. We had a good time chatting with our friends and everyone else that came by! Small town games are the place to be social! Our team lost, but we still had fun!

It was 101 degrees on Saturday! This is September!! At least we were going to be on the water all weekend!
We left Saturday afternoon to meet our cousins at the lake. We go with two of Jeremy’s cousins, their husbands, and kids. It’s a fun group! We got there around dinner time, and we fixed the best dinner! We had small bacon wrapped steaks, baked potatoes (sweet and regular), vegetable kabobs, and salad. The salad was made with kale, arugula, mandarin oranges, and feta cheese, with a balsamic dressing.
There were eleven of us there, and we all gathered around one big table to eat. I ate half of my steak and gave the bacon and other half to Jeremy. I also had a sweet potato, salad, and a bunch of vegetables. Dinner was so good, and I was so full!
After dinner, we stayed up late and played some card games. We played one of my favorites – Skip Bo, and I actually won!
On Sunday morning, we got up early and headed out to the lake. When we got there, it was not very busy yet. The wind was blowing, so the water was a little wavy, but it was so beautiful with the sun shining on it.
We took out the pontoon, the ski boat, and the jet ski. We went to the cove that we always hang out in and anchored the pontoon. Then, we all piled onto the ski boat and spent about an hour letting the kids ski and wakeboard. I love skiing, but my leg has been bothering me some the last couple of weeks, so I didn’t want to push it. After that, a few of us went back on the pontoon and hung out there while the others went tubing. When everyone came back from tubing, we started setting up lunch. We had a little bit of everything. They made hotdogs on the grill. We also had chicken salad with apricots in it. I had never had that before, and it was amazing!! It is my new favorite way to make chicken salad. There was also turkey sandwiches, egg salad, tuna salad, Trader Joe’s spinach and kale Greek yogurt dip, carrots, watermelon, mangoes, chips, pita crackers, and peanut butter and jelly. Everyone helped themselves to a little bit of it all. I ate carrots and the spinach dip and some chicken salad and crackers. I also drank my Lipton’s Diet Green Tea. I had two bottles of it yesterday. I didn’t eat a lot, but when I’m out in the sun, I don’t usually get very hungry.
When everyone was done eating, we cleaned it all up, and the older kids left to go tubing again. Jeremy and I stayed behind with the younger cousin. She is three, and she wanted to fish. Jeremy fixed her a fishing pole with a worm on it. She wanted to touch all of the worms in the bucket! She kept pulling them out to see which was longer. Then she sat with me on the edge of the boat and fished. We only caught one, but I was surprised at how long she sat there and watched. I think she was sleepy!
The rest of the day we spent napping and tanning on the pontoon. The others would come and go in between skiing and tubing, but we just used that time to relax! The weather was beautiful! It did get really hot in the afternoon, but there was a breeze blowing so that helped a lot.
Late in the afternoon, we took the boats in and went back to the house. Everyone got cleaned up and we started dinner. We cooked hotdogs and brats. We also had chips, asparagus, Whole Foods quinoa salad, broccoli salad, roasted eggplant salad, and three different kinds of pasta salad. I ate a hamburger, a lot of asparagus, some quinoa salad, and a scoop of broccoli salad. I don’t like pasta salad. I felt like I ate a lot, but my stomach was still growling!! I guess it was from being in the sun all day and not eating much lunch. But, I didn’t want to just snack on junk, so I just drank a ton of water instead.
After we got dinner cleaned up, I helped my cousin with her math homework. This is really funny because I am not a math minded person at all, so I don’t know how much help I was, but I could google it! Late Sunday night, Jeremy and I headed back home. We were supposed to have my mom’s birthday party on Monday afternoon, but when we were on our way home we got text saying that it had been postponed. So, since we were already almost home, we decided to just come on back.
When we got up Monday we went out to the land to check the cameras and feeders. Then we went to pick up a few things at Walmart.
Jeremy had a bunch of stuff to do around the house and needed to mow the yard, so I just unpacked our stuff from the lake and did some laundry. I got my lunches ready for the rest of the week, and cut up my bell pepper. Half of it is in strips to eat when I want a snack, the other half is diced for salads and omelets. Then I got my blueberries washed.
Then I got caught up on Bachelor in Paradise! Overall, it was a great weekend. I’m ready for fall, and the weather forecast this week looks great – it’s finally going to cool off some!
What did you do this weekend?
As you can probably tell from my title, I do change my mind sometimes. 🙂 I find something I like and I am stuck on it for a long time. Then I will get tired of them and go for a long time without it. But, as of right now, these are my go-to foods. I pretty much eat these almost every day. For the most part, they are all healthy, but I just really do like them.
- Granola bars – I love granola bars because they are so handy to just grab for a quick snack. They are filling and give me energy, and they are low calorie (140). I carry one with me at all times. I love all Nature Valley bars, but my absolute favorite is Nature Valley Dark Chocolate Cherry. I’ve been stuck on this one for a long time and I get really mad when Walmart is out of them! I usually have this for breakfast and then I’ll have one for an afternoon snack before I run. I also love Bear Naked Chocolate Chip Peanut Butter bars. They taste like no bake cookies! This was the best find!! These are protein bars, so they have a few more calories (250). I eat them for lunch. They have 8 grams of protein in them, so one of them fills me up!
- Eggs – I absolutely love scrambled eggs. If you have noticed in my previous posts, I eat these for dinner several times a week. Scrambled is the only way that I like them though. I could eat breakfast for every meal. Eggs are a great source of protein, and they are packed with vitamins! #win
- Jelly – I have a huge sweet tooth, so I am so glad that Smuckers makes low sugar jelly. I have been eating the strawberry for a long time, but I recently found the grape, and I am in love! I just wish that it came in a handy squeeze bottle.
- Toast – Just like I said before, I love breakfast foods. I like toast because it’s not as heavy as biscuits. I can eat it and not be miserable, or feel guilty for eating a lot of calories. I use Sara Lee 45 Calorie Multi Grain Bread for my toast.
- Pumpkin – Pumpkin is one of my favorite flavors. I love fall when everything is pumpkin! Of course I love pumpkin pie, and pumpkin cookies, and really pumpkin anything. But, I try to use it in a healthy way. I am going to make some healthy pumpkin muffins this week. So, I’ll get that recipe up soon.
- Yogurt – My favorite yogurt is Dannon Light and Fit Greek yogurt. I really like all of the flavors. I am always stocked up on yogurt. It’s only 80 calories and it’s the perfect snack or breakfast. My favorite flavor is the blueberry. I really love how the fruit flavors have real fruit in them. Plus, yogurt contains probiotics, which is a huge helper in your digestive health.
- Bell Peppers – Any color! I eat these on everything. I keep them cut up in the fridge and will eat them raw with hummus. I sautee them and eat them on chicken. I cut them up small and cook them in my eggs. I love them! They are low in calories, and they contain a lot of vitamin C, vitamin B6, and vitamin E.
- Chicken– Chicken is so versatile. There are so many different ways to cook it. (check out my Chicken board on Pinterest for ideas) I love it marinated and broiled! It is one of the healthiest meats that there is, and it is a great source of protein. Plus, it’s just really good!
- Blackberries – Growing up, I never really liked these because of the seeds. But, a few years ago, we found several blackberry bushes in our pasture, so I started picking them. I have bags full of them in the freezer. I will just fill a bowl up and let them thaw out in the fridge. I love to just eat them raw. Usually, they are super sweet when I pick them, but sometimes I will have to put a little Stevia on them. I keep a bowl of berries in the fridge, and they are something easy to snack on. I will also mix them in yogurt. But I usually just eat them by themselves.
- PB2 – This is my saving grace! I am addicted to peanut butter. I always have been. However, I can look at a jar and gain 5 pounds!! So, with PB2, I can still eat peanut butter and not have to worry about all of the calories. PB2 still gives me the energy that regular peanut butter does, and to me it tastes better. I didn’t realize how sweet regular peanut butter was until I started eating PB2. I also like that I can throw it in smoothies, or use it in cookies. It’s very versatile. I like the regular PB2 and also the chocolate PB2.
Bonus: Number 11: I also love Cholula! I eat this on everything. Eggs, meat, tacos, anything Mexican. It’s perfect. It’s not too hot, but it gives you a little kick. It has the perfect flavor.
Here is what my dinner has looked like most nights for the last few weeks: Sara Lee toast, Smuckers low sugar jelly, scrambled eggs with bell peppers, and Cholula.
