Hi Guys!  This week’s meal prep was super easy and quick because I didn’t have a lot of time on Sunday.  We made a quick run to the grocery store and I picked up a few necessities along with some fruits and veggies.  When we got home, I threw together some quick meals and snacks for the week.  I love meal prepping every week because it’s so easy to have everything ready.  But this week it was necessary!  I have been pretty sick the last couple of days and definitely didn’t feel like cooking anything, so it was super easy to just warm up one of these meals and have something hot to eat without having to spend the time prepping, cooking, and cleaning!   more “Meal Prep Edition 4”

Tex Mex Turkey “Meatloaf”

Hi Friends!  If you haven’t figured it out yet, I LOVE ground turkey!  This is my go-to for everything.  I always have several pounds of it in my freezer!  It’s easy to cook, you can season it so many different ways, and it’s easy to add to anything!  This week I decided that I wanted to spice it up a little bit.  I had a meatloaf in my mind, but when I got to looking at recipes it wasn’t really what I wanted.  So, I just made it how I wanted and crossed my fingers that it would come out okay.  And it did!  It was delicious and I will definitely be making it again.   more “Tex Mex Turkey “Meatloaf””

Gluten Free Pumpkin Muffins

Hey guys!  Today I want to share a recipe with you that I was recently introduced to.  Someone brought the most amazing pumpkin muffins to work a couple of weeks ago and I just had to have the recipe!  I was actually shocked to find out that they were gluten free.  These were seriously the best pumpkin muffins I have ever had!  The recipe can be changed to make them where they’re not gluten free, but I promise you won’t know the difference.  I made these last night, so I could share them with you.  I’m warning you it’s hard not to eat more than one!  more “Gluten Free Pumpkin Muffins”

My Weekly Recap

Hi Guys!  I hope you all had a great week!  Mine was really good.  I had a little unexpected, but very much needed break during the middle of the week and it was awesome!  I didn’t get a lot of running in, but I did better.  My back is finally starting to feel better!  It’s not 100%, but it’s really close.  Maybe 96%!  So, I took more rest days than run days this week just to help it feel better.  I did do a lot of yoga and that really helped my back.  I didn’t really feel like I trained that much this week, but I did make sure to meet my Pile on the Miles goal every day.  (Walk or run 30 minutes each day)  I’ll share with you what I did do.  more “My Weekly Recap”

Banana Oat Monster Cookies

Monday night I had a huge sweet tooth!  I was craving cookies and I almost dove into the chocolate chip cookie dough that’s in the fridge.  But, I have been doing pretty well with my sugar intake, so I decided to make something healthier.  Plus, I had three extremely ripe bananas that needed to be used or trashed.  So, I threw together some healthy banana oat cookies.  more “Banana Oat Monster Cookies”
