Recipe Roundup: Favorite Chicken Recipes

Hey Everyone!  Today I want to share some of my favorite chicken recipes with you.  With a new year usually comes new fitness and healthy eating goals.  Chicken is one of my favorite lean meats to eat.  It has tons of health benefits and is packed full of protein.  In fact, chicken is lower in calories and higher in protein than steak or pork.  Below are some of my favorite ways to eat chicken.   more “Recipe Roundup: Favorite Chicken Recipes”

My Weekly Recap

Hi Guys!  I hope you all had a great week!  Mine was really good.  I had a little unexpected, but very much needed break during the middle of the week and it was awesome!  I didn’t get a lot of running in, but I did better.  My back is finally starting to feel better!  It’s not 100%, but it’s really close.  Maybe 96%!  So, I took more rest days than run days this week just to help it feel better.  I did do a lot of yoga and that really helped my back.  I didn’t really feel like I trained that much this week, but I did make sure to meet my Pile on the Miles goal every day.  (Walk or run 30 minutes each day)  I’ll share with you what I did do.  more “My Weekly Recap”

Banana Oat Monster Cookies

Monday night I had a huge sweet tooth!  I was craving cookies and I almost dove into the chocolate chip cookie dough that’s in the fridge.  But, I have been doing pretty well with my sugar intake, so I decided to make something healthier.  Plus, I had three extremely ripe bananas that needed to be used or trashed.  So, I threw together some healthy banana oat cookies.  more “Banana Oat Monster Cookies”

Juicy Baked Chicken

Hi Guys!  Today I’m linking up for another What I Ate Wednesday post. I have a recipe that I want to share with you.  Last week I made some epic juicy baked chicken! EPIC! It was tender, juicy, full of flavor, and delicious. Which is not usually what you get with baked chicken. I can’t take all the credit though. After all I just followed some instructions and threw it in the oven. It’s not that hard! This was definitely an easy thirty minute meal, and would be great for busy nights!  All you need is chicken and the breading kit that I found!  more “Juicy Baked Chicken”

WIAW #1

Happy Wednesday – It’s my birthday!!  I keep seeing the WIAW (what I ate Wednesday) posts and thought I would join in the fun!  This will be my first ever WIAW post.  I love seeing what other people are eating, and also getting ideas for new meals.  I hope you can find some inspiration from mine, or just see that I’m normal and sometimes I don’t always eat healthy.  I do like to treat myself and indulge in something not-so-good for me every now and then.  I’m excited join in on this link up and share with you what I ate.  You can join in the fun too here or here.   more “WIAW #1”
