Hey Everyone!  How was your week?  Mine was pretty great!  I had a good week of workouts.  I did a killer leg circuit on Thursday and my legs were still sore on Saturday!  My runs this week were okay.  I had a couple of bad ones, but that happens.  You just have to try again!  Here’s what I have been up to this week.    more “Life, Food, and Fitness Lately”

Slow Cooker Chicken Fajitas

Happy Wednesday!  This week I made one of my most favorite meals and turned it into a meal prep so I could eat it every day!  I didn’t have much time (actually, none at all) on Sunday as I was busy working on some projects.  But, I was not going to miss prepping my meals for the week.  I made a slow cooker meal so I could just throw it in the containers!  It was simple, delicious, and fast!   more “Slow Cooker Chicken Fajitas”

All About R.I.C.E.

This week was all about RICE!  That is not easy for me at all.  I tend to ignore aches and pains and keep pushing on.  But, I couldn’t ignore this.  I spent the first part of the week resting, icing, and elevating my feet while wearing compression socks.  So, this week was not a good one in terms of running.  But, it did get better towards the end, and my dad and I are planning a long run together next weekend.   more “All About R.I.C.E.”

Meal Prep Edition 8

Hey guys!  This weekend I was a little pressed for time, so I just threw something together for my lunches, but it turned out great!!  It’s always nice to have a few go-to meals that can be thrown together quickly so you still have something healthy to eat.  I also like to keep some ground turkey in the freezer so I can thaw it out and cook it and pair it with some veggies – fresh or frozen, whatever I have on hand.  more “Meal Prep Edition 8”

Spring Has Sprung!

Hey Everyone!  I hope you have had a great first week of spring!  We had some record breaking temps this week.  It was in the 90’s at the beginning of the week and then stayed in the upper 80’s the rest of the time.  It was so nice!   We were able to sit outside after dark and enjoy the warm weather.  The evenings offered the perfect running weather.  And, I love warm mornings.  I am so ready for summer!  more “Spring Has Sprung!”

Meal Prep Edition 6

Hey guys! Happy Hump Day!  Things have finally settled down around here and I have had some time to do some real meal prepping.  I love having just quick go to meals that I can prep quickly, but I do get tired of them sometimes.  The last couple of weeks I have been eating yogurt with fruit for breakfast and ground turkey and steamed veggies for lunch.  I have been buying the frozen steamer veggies.  By doing that, I can have my meals prepped for the week in less than 30 minutes.  But, I was ready for some real meals this week.  more “Meal Prep Edition 6”

Workouts, Food, & New Shoes

This week marked the half way point in my training.  I have 9 weeks left!  This week I didn’t run all of my runs.  My new shoes took a whole week to get here!  My shin was starting to feel better by Tuesday but I didn’t want to chance hurting it by running in old shoes.  Since I wasn’t running, I made sure to do other workouts in place of my runs.  more “Workouts, Food, & New Shoes”

Skinny Southwestern Chicken Salad & Cilantro Lime Vinaigrette
