Meal Prep Edition 9

Hi Guys!  As promised in my recap here’s my meal prep post for this week’s lunches.  I just realized as I typed my title that I’m only on week 9 of meal preps.  I do this way more than I share.  I guess I need to get better at sharing.  🙂  This week’s meals were really easy, quick, and something that I eat all the time.  They are so simple that I wasn’t even going to post this, but I used my air fryer to cook all my veggies and have been getting a lot of questions about how that works.  So here’s all the answers you guys want! 

 I started my meal prep with two pounds of ground turkey. 

While that was cooking, I cut up zucchini and squash. 

I put the zucchini and squash in the air fryer and sprayed it with coconut oil.  Then I scrolled to the roast mode, which is 25 minutes at 370 degrees. 

I stirred them after 10 minutes to make sure that they were cooking evenly.  

While the veggies were roasting, I sprayed the ground turkey with coconut oil. 

I love the flavor it gives the meat!  And then I seasoned it with Trader Joe’s Everyday Seasoning. 

I took a shortcut and microwaved a bag of green beans. 

These are one of my favorite veggies!

When they were done, I seasoned them with some Lawry’s Total Seasoning. 

Then the zucchini and squash were done.  Perfection! 

Once it was all done, I put it in my meal prep containers and drizzled a little soy sauce on top of the ground turkey. 

This is just my lunches for the week.  I used the leftovers for some of my dinners as well.  I had a lot of ground turkey and zucchini and squash leftover.  Plus I had some spinach, carrots, hummus, apples, pears, and protein bars.  That’s about all I ate this week – meals on repeat!  Oh, and my new favorite sweet treat…

I love meal prepping because it is so easy to just grab a container out of the fridge and not have to worry about what you’re going to eat, especially if you are busy. 

It’s the best thing I can do to stay healthy!
