Happy Monday Friends! It is currently 5 am and I am sitting here sipping my morning Spark and finishing up this recap. I had it almost ready to go last night and I just could not keep my eyes open anymore. This past week was filled with some really good workouts, runs, and lots of good healthy food! Most of the time I eat my meals on repeat and it was no different this week.
I meal prepped last Sunday so I could have a healthy week of food to eat. My meal prep consisted of chicken breasts cooked in a little coconut oil and veggies roasted in the air fryer. I had a few questions about how I cooked the veggies in the air fryer. I will do a meal prep post on Wednesday and show you exactly what I did!
On Monday I woke up to this.
As much as I wanted to stay in bed and snuggle with him, I had to get up. I started my day off (and every day this week) with a protein bar and spark.
Here is the calendar of my workouts this week. Wednesday was another run, but I forgot to put it in and it won’t let me add it after that day. (LISS is running or walking.)
My workout Monday was BBG arms and abs. It was tough and I sure felt it on Tuesday!
Dinner was eggs (one egg and 3 egg whites) with a piece of Sargento 45 calorie cheese mixed in, toast, turkey sausage, and blueberries.
While I ate I watched the Bachelor. I’m not a big fan of Arie, but all the drama hooks me every season. It’s ridiculous how some of those women act and it makes me laugh! Jake watched all the commercials that had dogs on them.
On Tuesday the weather warmed up to almost 60, so my workout today was a long walk with Jake. He ran some of it, but we mainly just walked. I was planning on doing a BBG lower body workout, but I was just too sore. So, after our walk I just stretched for a while and used my stick roller.
Dinner tonight was something different. I have been wanting to try to cook chicken in my air fryer. We’ve done some frozen hot wings and they turned out crispy, but I have been wondering how a chicken breast would do. I sprayed my chicken breast with coconut oil and then covered it in Trader Joe’s Everyday Seasoning. They cooked in the air fryer at 360 for about 25 minutes. It was perfection! The outside turned golden brown and crispy and the inside was juicy. Probably the juiciest chicken I have ever eaten. I ate a piece with my roasted veggies. The other two I saved for lunch for the rest of the week.
Wednesday was really busy. Jake got a bath, and he greeted us at the counter when we went to pick him up.
By the time I had time to go run, I was worn out. Even my Spark wasn’t helping much. But, I had planned on running all day and I wasn’t going to make excuses. I headed out around 5 and once I got going I felt good.
I made it two miles before I had any pain. And I was running so good too! All of the sudden my foot had sharp pains going up through it. I stopped for a minute thinking it would stop, but it didn’t. Before on my runs when the pain starts, it’s kind of a dull ache. This was not at all. I literally had to limp home. As soon as I got inside, I put on my new recovery sandals that Jeremy got me for Christmas. They helped tremendously. I wore them around the house all night and by the time I went to bed I had no pain. I just keep telling myself that my first three runs were just a mile each. Now, my last two runs have been 2 miles, so maybe next week I can make it 3 miles.
Since Jeremy was home tonight, I fixed us some dinner. He requested tacos (his favorite meal).
After we ate we caught up on the latest episode of Married at First Sight and then I was asleep before 9:30!
Here was Thursday’s lunch – roasted chicken, zucchini, and squash.
Thursday I did a BBG lower body workout. My legs felt like jelly afterward! I had a hard time walking for a while. I stretched for a long time and that helped to keep my legs from getting sore.
Jeremy was gone reffing until late, so I spent the evening watching TV and playing with Jake. My dinner tonight was a skillet full of leftovers that I had in the fridge. I cooked some garlic, peppers, and onions in coconut oil. When they were soft, I threw in some ground turkey and drizzled a little soy sauce on it all. It was super easy, delicious, and filling.
I bought a bag of these Bear Naked granola bites. This has been my go-to this week when I have a sugar craving. I grab 4 or 5 pieces and that has been my dessert.
I did not sleep well Thursday night so Friday was a really long day. Actually, this week has been really long. I feel extra stressed about everything, and I know that grief is causing a lot of this. I don’t know how to talk about it, or how to deal with it so it’s turning in to stress. Things that normally wouldn’t bother me so much are really getting to me. And I just feel physically and emotionally worn down. So, by Friday I was in need of some stress relief. And being able to workout now is helping. Before I worked out, I went and visited my grandparents for a little while. They have both been sick for a couple of weeks, but are finally on the mend. Then I went over and visited my parents too.
When I got home, I was ready to do something about this stress. It was too dark to go run so I did my last BBG resistance workout for the week.
It was the total body workout and it felt great! When I was done with it, I still felt like I needed to be moving, so I scrolled through Pinterest and found a quick strength workout and did it too.
Jeremy had games Friday night so Jake and I sat at home and watched TV. Jeremy decided to pick up some dinner on his way home. I told him I didn’t care what…I was thinking he would grab Rib Crib or something that we normally eat. I was wrong. LOL He brought home Taco Bell. I really don’t like Taco Bell, but at least he brought me a chicken salad bowl. It had lettuce, chicken, beans, rice, guacamole, pico, and some kind of spicy sauce in it. It was okay; not something that I would choose to eat.
After that we watched Live PD. While we were watching TV, Jake jumped up and started digging in his bed. He did it for a good 3-4 minutes. We laughed so hard. I’m not sure what he was trying to do…
Saturday morning I got up early and was considering a run. My body was so sore from the BBG workouts the last two days so I decided to make today my rest day. I went grocery shopping, and then later in the afternoon we went to our friend’s daughter’s second birthday party. She was so cute opening all her presents.
After the party, we went to Applebee’s for dinner. Again, not a favorite or a place that I would willing choose to eat. But, we had a gift certificate from Christmas and Jeremy wanted to try the riblets. He ate there one night last week with his refereeing partner after their games and saw someone eating them. He said they looked so good. He was not impressed and said he won’t be going back there for a very long time! They were cold, and they were all bone and no meat. I actually liked my meal. I ordered a grilled chicken breast with steamed broccoli and fire roasted veggies. The chicken wasn’t dry and I love the dressing that they put on the veggies. If anyone knows what this is, please send it to me so I can make it at home!
After dinner we went home and watched The Intern and Neighbors. I’m starting to think we watch too much TV. 🙂
Sunday morning I woke up with a ton of energy. Then I had some Spark so I was really bursting with energy! The first thing I did was my meal prep for the week.
Then I did some laundry and cleaned the house. And then…I headed out for a run. I am really enjoying running right now. It is hard because I’m out of shape, but for the first time in many, many years, I am going into these runs with no expectations. I’m not worried about my pace or distance. I’m just running for fun. I ended up running 2 1/2 miles today, and then I walked another mile. I did have some pain in my foot, but I was able to stop and rest for a minute and it pretty much went away. And, it was 64 degrees outside and absolutely beautiful! I didn’t want to stay inside so I also took Jake for another 1/2 mile walk. I had my 10,000 steps before noon!
After my run I had some leftovers from my meal prep: ground turkey, roasted squash and zucchini, and some soy sauce.
This week I felt like I made a little tiny bit of progress. I started the BBG workouts on Monday and I really struggled trying to get through the four 7 minute sets. I made it halfway and I was ready to quit, and had to take several breaks in order to finish. Finishing that workout was definitely tough and a huge challenge. The next one that I did I made it three rounds before I started struggling. By Friday, I made it almost to the very end before I started really having to push myself to finish. I also was able to run farther this week than I was last. Those things aren’t huge, but I’m calling them progress and am happy with it.
