Food & Fitness This Week

Hey Guys!  I hope you all had a fun and safe Fourth of July!  I really can’t believe it’s July already.  Where has this year gone?!  It’s flying by so fast.  I didn’t get a recap done last week because of the holiday.  But, I did post about one really good dinner that we made.  You can read about that epic food here

Sunday night we made some homemade salsa.  I’ll post that recipe soon!  Jeremy’s aunt and uncle were here visiting and Sandra and I started it.  We were halfway through it, and the power went out.  We have never been without power for more than 10 minutes.  This lasted for almost 5 hours!  Apparently a storm broke two high voltage transmission poles and half our town was without power.  So, we had to wait in the dark to finish the salsa.  Once the power finally came back on, we were able to finish canning it!

On Monday morning we went to eat at a local diner.  I ordered a one egg omelet with cheese and bell peppers and wheat toast.  It came with hash browns.  I ate a few bites of them, but they were so fried that it was just like crispy grease.  Yuck!

After breakfast, I worked out.  I was thinking about running a 10K the next day and I didn’t want to be sore or tired, so I did some abs and arms.

Later that afternoon I had to make a decision about the race before the registration closed.  I was really stressed about it.  Part of me really wanted to run the race because it was the 50th anniversary.  But, my foot had other plans.  I know I talked about it some a while ago.  It’s been a little better, but it’s really slowed me down and has made me cut back a lot on my running.  I’ve been rotating through three different pairs of shoes.  Some days I can run a few miles and it not hurt, other days I can’t run one before it starts hurting.  Some nights I can’t sleep because it’s throbbing so much.  It hasn’t quit hurting since my 8 mile run the Monday the week before the race.  It was getting to the point where I couldn’t even find a shoe or sandal to wear that didn’t hurt it.  So, I decided that it probably wouldn’t be a good idea to run a 10K.  Actually Jeremy pointed that out.  You all know how stubborn I am.  And, those of you that kept suggesting that I get it checked out, I am finally listening.  I have an appointment this week with a podiatrist.  I just really kept hoping that it was just my shoes and new ones would fix it.  But, now I don’t think that’s the case.   So, anyways, I sat around most of the day feeling sorry for myself and mad that my foot hurt.  But then I got distracted by dinner. 

For dinner, Sandra and I fixed the guys a fried meal.  Literally, everything was fried!  This is why I don’t like to eat fried food.  Just fixing it was so gross!  But we had fun laughing at ourselves.  It was like a three ring circus!  LOL  They wanted fried potatoes, fried squash, fried zucchini, and fried okra.  We had all four burners going on the stove and it took forever!  I oven “fried” a few pieces of zucchini and squash for me.  Jeremy loves all that food, and he eats it all at once, once or twice a year. Probably because I won’t fix it for him. 🙂

Tuesday morning I woke up at 6:30 to several texts from friends looking for me at the starting line at the race.  I was pretty disappointed that I wasn’t there.  But, once I got out of bed and started walking around, I was reminded why. 

We walked over to Jeremy’s dad’s to eat breakfast with his family. 

After breakfast, I snuck away and got in a good long workout. 

We checked out our garden and I found this little watermelon!

We put out some watermelon seeds to see if they would do anything, and they are slowly taking over the whole thing.  We also have a TON of zucchini and squash.  Everyone we know is about to be getting deliveries!  We sat around visiting for a little while before everyone went home.  Then right before dark, Jeremy and I headed over to my grandparent’s house.  They live right near the park, so we have an awesome view of the fireworks from their yard. 

I was up early Wednesday – actually, I’m not sure that I ever really went to sleep.  Between the fireworks, and then the thunder all night, poor Jake was so stressed out and didn’t sleep.  I ended up sleeping for a while in the floor with him, but we were up most of the night.  I would have just stayed in bed and slept in all morning, but I had a hair appointment.  I grabbed a protein bar on my way out the door. 

And on the way home from that I drank some Spark so I would be ready to workout when I got there.  Even though I wanted nothing more than to crawl back in the bed, I did a HIIT workout instead.  And, I followed it with a Fitness Blender 10 minute ab workout too. 

After that I was starving!  I had some eggs and blueberries for lunch. 

I was dragging the rest of the day, and I really don’t remember doing much!  I wanted something light for dinner and I had some zucchini from our garden.  So, I made some zoodles!  I sautéed them in garlic and olive oil.  Then, I threw in a handful of spinach, and topped it with some ground turkey.  It was DELICIOUS!! 

Later that evening, my sweet tooth kicked in.  I made some cinnamon apples and that fixed it! I cut up the apples, and put them in a skillet with a little water and cinnamon.  I just cook them until they are soft and the cinnamon gets a caramel like consistency. 

Thursday morning I got up early so I could get a lot of stuff done.  And go lay in the pool!  Jeremy’s aunt and uncle were coming back to town, and we were cooking dinner for them at our house.  As soon as I got up, I had some Spark to get me going.  I powered cleaned my house, answered some emails and did some blogging, and then did another HIIT workout.   I forgot how much I like these! I love using Fitness Blender – they have workouts for everything!

That afternoon I spent a couple of hours in the pool before coming home and getting dinner ready. 

I fixed a taco casserole for everyone, and I made myself the same dinner that I had on Wednesday night.  I loved it!  That meal is definitely going to go into my meal prep rotation. 

 I got up early Friday morning so I could get a workout in.  I did another Fitness Blender HIIT workout and a 10 minute ab workout. 

I was definitely starting to feel it from the last couple of days.  My body was feeling a little tired, or that could be from the lack of sleep this week.  We’ve been up too late and then up too early. 

I had some errands to run in the morning, and then the rest of the afternoon Jake and I relaxed around the house.  I got caught up on some shows on my DVR. 

Later we went with Jeremy’s dad, aunt, and uncle to eat at Cotton Patch.  We’ve only been there once, and it was okay.  The food was better this time.  I ordered the blackened tilapia, steamed veggies, and a side salad.  I liked it!  I really liked the veggies!  They were cooked perfectly!  I know I took a picture of the tilapia, but I cannot find it.  So, you only get to see the side salad.  🙂

We stayed up late watching a movie and I slept better than I have in a really long time!  I slept for 6 hours straight without waking up.  And, I slept hard because when I did wake up at 6 am, I was wide awake!  I made myself go back to bed for a little while.  When I got up, we went to town to meet everyone for breakfast.  I had scrambled eggs and wheat toast. 

Then I came home and did an arm and ab circuit.  And I stretched…A LOT!  My body was sore and tired! 

(Yes I know my mirror needs to be cleaned! 🙂 )

Saturday night we went to our taco joint.  We shared some fajitas.  I love their fajita chicken, and Jeremy likes them because they put bacon in them. I just wish they wouldn’t drown them in cheese! 

Sunday I took a rest day.  I was sore, so I stretched some more.  That afternoon we headed out of town to go to Jeremy’s mom’s 70th birthday party.  We spent the afternoon and evening visiting with her.  When we got back, we both went straight to bed. 

I’m up early this morning and have already walked Jake and got in a good HIIT workout.  I have a busy day planned.  I hope you all have a great week!!

    How do you do your zoodles? Do you have a special tool? I’ve seen a couple different types but have no idea which is best.

      I have a spiralizer that turns them into noodles. It’s really handy! 🙂

    Drowning fajitas in cheese is my favorite way to eat them. I’m with your man on that one.

    Sorry to hear about your foot. I think skipping the race was smart. Does it hurt when you do all the HIIT workouts too? Maybe a couple of rest days would allow it to heal for you.

    Your watermelon is adorable. How awesome you’ll be able to eat him in a few weeks. I planted cucumber and zucchini and they are taking over.

      Thanks for hosting! I have to modify my movements so I’m not jumping on my foot. It does hurt if I do! My zucchini is too. I am going to plant cucumbers next year!

    I’m glad you are going to have your foot looked at by the podiatrist. You don’t want to inadvertently do any further damage by not knowing what the problem is. There is nothing better than a refreshing float in a pool on these hot summer days! That’s a cute idea of having three different birthday cakes.

      I love the pool this time of year! It’s my favorite place to be in the heat! I knew you would be happy that I’m getting my foot looked at. I’ll let you know how it goes. All of the cakes were a different flavor! Everyone got to eat what kind they liked.

    GOOD call on letting your foot rest instead of racing! I too am the MOST stubborn when it comes to listening to pain/injuries. In May I pushed myself to run a 10k on a hurting knee and have now had to take 1.5 months off. So not worth it!

    I’m super jealous of your cute little watermelon. We tried to plant one this year and it didn’t make it :(, but we are getting lots of peppers!

    Also, after seeing your pic, I now want 3 cakes on every birthday haha, that’s awesome!

      I am jealous of your peppers! We planted a bunch of plants but are only getting a few and they are very small. Wouldn’t it be so much easier if we just listened to our bodies?! I am the worst at that. I always think it’s nothing and it will get better. But, I guess that isn’t always the case. At least your time off is during the hottest time of the year! You should get three cakes! That would be awesome!

    Oh watermelons! I want to grow some in my yard. They are the best after a run in the summer! Looks like you had a good week, even though your foot kept you from being at the race with your friends. That’s a bummer, but it’s always smart to rest things like that so they don’t get worse.

      Lol the watermelons are taking over our yard! But I agree, they are awesome to have after a summer run! I can’t wait till they are ready to pick!

    Aww so fun! Tara, you are slaying these workouts! Motivating! I love how ya’ll cooked up all those fried foods for the guys hahha. Fried okra is pretty dang delish, and I don’t even like fried food either. (except fried pickles are insane- SO GOOD… with some ranch.. good for the soul not for the stomach. Hahah.
