Hi Guys! Happy Fourth of July Weekend! I hope you are enjoying the weekend and have some fun plans for the Fourth. I’m going to change things up a bit this week and instead of doing a recap, I’m going to share my favorite dinner from this week.
This week was the same as always. Workouts, runs when it’s cool, and a couple of much needed rest days. There’s not much to report other than I had an awesome 8 mile run on Monday! Fast forward to Thursday. We wanted something different for dinner. I feel like we eat the same things all the time. Which is fine, but tonight we want to break the cycle. But, I wasn’t really in the mood to cook a spend forever cleaning up the kitchen. So, I went to my go-to dinner inspiration – Pinterest – and found some one pan dinners. I found one that had sausage, potatoes, and green beans and was all cooked together in a skillet. This is where my inspiration came from.
Instead of a skillet, we decided to use some foil pans and cook on the grill. It is hot after all and I didn’t want to turn the oven on. For our dinner, I decided to use peppers, onions, zucchini, squash, and potatoes.
I cut all of that up into bit sized pieces and drizzled some olive oil on it. Then, I used this seasoning. It’s AWESOME – on EVERYTHING!! You can use whatever seasonings you want though.
I put the peppers, onions, and potatoes in one pan. We used squash and zucchini from our garden, so Jeremy wanted to cook them separately so we could see how they tasted.
They went into another pan with the Total Seasoning and a little bit of butter.
Then, Jeremy brought home a TON of sausage. Seriously enough to feed at least 6 people! The pan with the veggies was already full, so the sausage went into one on it’s own. I know my title says one pan. That’s how it should be cooked, but we did it in three. So, however you want to do it. Next time we will definitely cook the sausage with the veggies to give them more flavor.
We cooked them on the grill for about 40 minutes, until the potatoes were soft. If you cook them all together, you will want to cut bigger pieces of the veggies that cook faster, and smaller pieces of the potatoes. We had to take the zucchini and squash off the grill after about 25 minutes.
It turned out absolutely divine…delectable….scrumptious…delicious…you get the idea! We will definitely be adding this into our rotation, and next time we will cook it all in one pan and I will add in more veggies, and turkey sausage for me.
The best part of this, other than the awesome taste, is that there is virtually nothing to clean up!
We had a ton of leftovers and shared a bunch of it with my father in law. He’s got dinner for a couple of nights!

Oh and by the way…I am pretty excited about how many miles I had in June. Granted, a lot of them are from walking, but I ended up with 151.06. That was a lot of dog walks! Jake definitely needed it and he loved every one of them! So, I was able to complete Simply Taralynn’s 150 June Walking Challenge. I really didn’t know if I would or not! I’m pretty proud of that mileage!
