Slow Cooker Chicken Fajitas

Happy Wednesday!  This week I made one of my most favorite meals and turned it into a meal prep so I could eat it every day!  I didn’t have much time (actually, none at all) on Sunday as I was busy working on some projects.  But, I was not going to miss prepping my meals for the week.  I made a slow cooker meal so I could just throw it in the containers!  It was simple, delicious, and fast!  

I LOVE chicken fajitas, and I decided that I could make that and eat it by itself all week.  

You will need a can of tomatoes and green chilies, 1 of each color of bell peppers, half of an onion, minced garlic, and 2 pounds of chicken breast. 

Start by covering the bottom of the slow cooker with half of the can of tomatoes and chilies. You can put a liner in your slow cooker or just spray it with non stick spray. 

Layer in half of the bell peppers and onions.

Throw in some minced garlic.  I used 3 cloves, but you can use more or less depending on how much garlic flavor you like.

Then, put the chicken in.  Lay it in a single row.  Season one side with cumin, paprika, salt, pepper, and chili powder (if you want a little more spice).  Flip it over and season the other side.  I also threw in some dried cilantro.

Cover the chicken with the rest of the tomatoes and chilies. 

And then put in the rest of the bell peppers and onions. 

Cook on high for 3-4 hours, or on low for 6 -8 hours.  If you want to be able to slice it, cook it more on the low end of the time, otherwise it will shred.  Either way is fine, just make sure it is cooked all the way through.  I cooked mine for 3 hours on high and then cut it up.  It was already starting to shred. 

I divided the chicken, peppers, and onions between my meal prep containers.  I also put in a little salsa.  Each day I put in some avocado as well. 


Next time I will throw in some lettuce and maybe some black beans.  I also fixed some fruit bowls for the week too. 

For the rest of the meals and snacks I have yogurt, fruit, granola bars, and Mighty Muffin cups for breakfast choices.  For snacks I have bananas, apples, carrots, hummus, and granola bars.  Dinners this week are sub sandwiches, breakfast, baked chicken, and more chicken fajitas.  Seriously, I love them!

    So do you make this on Sunday? And how many days does it stay fresh? Do you use special containers? I always thought that when you made meat, it must be eaten in 3 days but so many people are doing this meal prep thing and I just worry about freshness. Sorry about all the questions but I need to start prepping!

      I do make all my lunches on Sundays. I just use some containers that I bought on Amazon. They are called meal prep containers. I don’t think there’s anything different about them than a regular tupperware container. As far as the meat goes, I have found that it lasts all week. Sometimes I’ll even make an extra lunch and have it on Saturday. By the end of the week, the chicken can be a little dry, but it’s still good. When I did fish, I only made it for three days at a time. I was too nervous to try it all week.
