Meal Prep Edition 8

Hey guys!  This weekend I was a little pressed for time, so I just threw something together for my lunches, but it turned out great!!  It’s always nice to have a few go-to meals that can be thrown together quickly so you still have something healthy to eat.  I also like to keep some ground turkey in the freezer so I can thaw it out and cook it and pair it with some veggies – fresh or frozen, whatever I have on hand. 

We did our grocery shopping on Sunday afternoon and later that evening I put together some food for the week.  I made ground turkey with green beans and onions and roasted sweet potatoes.  I love ground turkey and I think it goes with anything.   

I started by washing and cutting up my sweet potatoes.  I coated them with olive oil, honey, and cinnamon, placed them in a 400 degree oven, and baked for 30 minutes. (Get the recipe here.)

While they were cooking, I cut up an onion and cooked that in some olive oil with a little garlic.  Once it started to get some color on it, I threw in the ground turkey.  And, when the turkey was almost finished, I threw in some fresh green beans. 

I put a little soy sauce in there and let it all simmer together for a few minutes until everything was cooked through. 

While it was cooking, I cut up strawberries, a pineapple, and washed the blueberries. 

It was all easy and quick.  It took me less than an hour to prepare all of this and put it together. 


I filled my containers with lunch, and then I filled some with fruit. 

In less than 1 hour, I fixed lunch and snacks for the week.  And, it was all under $50!

For breakfasts this week I could choose from yogurt and fruit, oatmeal, granola bars, or shakes. 

Snacks were not pictured, but I bought some baby carrots and hummus, Nature Valley granola bars, and apples. 

Dinners were eggs, chicken fajitas, or sandwiches.
