Meal Prep Edition 6

Hey guys! Happy Hump Day!  Things have finally settled down around here and I have had some time to do some real meal prepping.  I love having just quick go to meals that I can prep quickly, but I do get tired of them sometimes.  The last couple of weeks I have been eating yogurt with fruit for breakfast and ground turkey and steamed veggies for lunch.  I have been buying the frozen steamer veggies.  By doing that, I can have my meals prepped for the week in less than 30 minutes.  But, I was ready for some real meals this week. 

I went grocery shopping on Saturday.  I bought for my breakfasts and lunches:  chicken breasts, tilapia, carrots, hummus, sweet potatoes, apples, blueberries, strawberries, pineapple, bananas, and yogurt.   Not pictured:  broccoli, GNC chocolate shake mixes, eggs, Sara Lee 45 calorie whole wheat bread, spray butter, and Nature Valley granola bars.

I started by cutting up my sweet potatoes into bite sized pieces.  I used 4 sweet potatoes.  I mixed 2 tablespoons of olive oil, 1 tablespoon of honey, and 1 tablespoon of cinnamon together and coated the potatoes in it.  I then spread them on a baking sheet and sprinkled salt on them.  I baked them in the oven at 375 for 35 minutes. 

While they were baking I cut up my broccoli.  I mixed it with 1 tablespoon of olive oil, garlic powder, and Lawry’s seasoning salt. 

At 25 minutes left on the timer, I put the broccoli in the oven too.  At 15 minutes, I pulled both pans out and stirred them. 

While they were cooking, I cut up my pineapple,

washed my blueberries, and washed and cut up my strawberries. 

When the veggies were done, I turned the oven to broil and put the fish in.  It cooked for 7 minutes. 

When everything was done, I portioned it out into my containers. (I have more fish to cook tonight.  I wasn’t sure how long it would last.)

All together, this took me a little under an hour and now I have meals and snacks ready for the entire week!

    I love having things ready to go for work! Is that pineapple corer hard to stick in to the pineapple or does it make it really easy? I always struggle with super sharp knives when cutting the pineapple!

      It’s not hard at all! It makes it so much easier to slice it. I tried to cut one with a knife once and I went out the next day and bought that corer. LOL
