Meal Prep Edition 5

Hey guys!  Today I’m sharing my meal prep from this week.  It was quick, easy, and delicious!  I didn’t do a meal prep last week partly because I didn’t have time on Sunday to plan and shop and prep, and partly because I was just too tired.  But, I had healthy food in the fridge and made that work all week.  But, I’m back this week with a delicious new idea to share with you. 

Breakfast:  yogurt, banana, cereal

Snacks:  Apples, carrots and hummus, blueberries, granola bars

Lunches:  Veggies stir fry with garden vegetable quinoa, mango and blueberries

We ran to the grocery store on Sunday afternoon and I stocked up on lots of fresh fruit and veggies.  I also picked up some of the Clear flavored water that I have been drinking.  I guess cherry limeade is a popular flavor because it is always out of stock.  So, I bought all that they had – which was 7.  I picked up some Dannon Light and Fit vanilla Greek yogurt and some Nature Valley granola bars, and I was all set.

When we got home, I got busy washing and chopping my veggies.

Then I heated some oil in the skillet and got them cooking.

I used bell peppers, onions, broccoli, and carrots.  I also threw in some minced garlic.

When the veggies were almost done, I added in a little stir fry sauce.

When that was all done, I started the quinoa.

And, when it was finished I got busy portioning out my meals.  I made 6 meals with ¼ cup of quinoa topped with a ton of veggies.  I stored the rest of the quinoa in the fridge to eat during the week.

Then I cut up a mango and washed and stored my blueberries.

I divided the mango between 3 containers and topped it with some blueberries.

And, then I went ahead and portioned out some carrots and hummus.  I filled three small containers with 2 tablespoons of hummus and carrots.

I also have some apples and bananas to eat this week for breakfast and snacks, and I bought some spinach to eat with my eggs for dinner all week.  I diced up one of the green bell peppers so I can throw it in my eggs too.

Since I am doing the wellness challenge at work and we have to eat a green veggie with breakfast, I will be eating spinach for breakfast too.  It is quick and easy to sauté it and I think I may like it better than green beans or broccoli.

    Love seeing your meal prep! I know that when I do it – and like you it’s often about having time – I feel so much better. It totally puts me in a good mindset and I don’t stress over what I’ll be eating.
