Hi Guys! This week’s meal prep was super easy and quick because I didn’t have a lot of time on Sunday. We made a quick run to the grocery store and I picked up a few necessities along with some fruits and veggies. When we got home, I threw together some quick meals and snacks for the week. I love meal prepping every week because it’s so easy to have everything ready. But this week it was necessary! I have been pretty sick the last couple of days and definitely didn’t feel like cooking anything, so it was super easy to just warm up one of these meals and have something hot to eat without having to spend the time prepping, cooking, and cleaning!
For my lunches I made ground turkey, whole grain rice, and steamed veggies.
Snacks included blueberries, apples, mango, bananas, carrots, and chickpeas.
I also bought 7 liters of this water. I can’t get enough of it!
I started the ground turkey and rice cooking. I seasoned the turkey with Lawry’ seasoning salt, garlic powder, and Cavendar’s. Lots of seasoning!
While those were cooking, I washed all my fruit.
Then I cut up some ripe bananas and put them into baggies to freeze to use for smoothies.
I rinsed and drained a can of chickpeas and put them into a plastic container to store in the fridge. I like having these to snack on or to throw on salads.
I also put my carrots into a container and stored in the fridge.
While the turkey and rice cooled, I cooked these veggies in the microwave.
Then I threw it all together and I was finished!
I think it took me about 30 minutes to get 6 days of lunches and all my snacks for the week ready.
