Hey guys! I’m back to share my meal prep from this week! Meal prepping is a must for me, and I love seeing other people’s meals on social media. I get so much inspiration from what others eat so I hope you can find some inspiration from what I’m eating. Having healthy meals readily available is the greatest! It not only saves you money, but it also ensures that you will make healthy decisions.
I went shopping on Sunday and bought a lot of fruits and veggies. So, here’s what I made with them.
Breakfast: Oatmeal with protein powder, scrambled eggs with spinach, green smoothies
Lunches: Ground turkey “meatloaf” with onions and peppers and veggies on the side
Snacks: Carrots, bell peppers, hummus, bananas, apples, blueberries, and frozen fruit for smoothies
I did not prep any breakfasts this week because I was out of my Kodiak mix and I am waiting on it to get here.
The first thing I did was chop up all of my bell peppers. (Rainbow colors!)
I diced half of them to use in my turkey and also to have for the week to eat in my eggs. I cut the other half into strips to have to snack on with hummus.
The next thing I did was to make some turkey meatloaf. I just played it by ear and threw it all together. It turned out really well and I will post the recipe on Friday! I know it doesn’t look so good, but I promise it is amazing!
While that was cooking, I sauteed some spinach with minced garlic, steamed some green beans, and steamed some sweet potatoes. (If you have not tried those SteamFresh sweet potatoes, you should! They are delicious and are super easy and quick!)
Then I started putting my lunches together.
After getting those done and put away, I washed my apples and blueberries.
And I was done! Meal prep doesn’t have to be an all afternoon chore. I spend about an hour each week doing this and it saves me so much time during the week!
