Meal Prep Edition 2

Hey Guys!  Welcome to this week’s edition of my weekly meal prep.  This week I tried to use up any food that I already had.  So, my meals are pretty simple, and there wasn’t much prep involved. 🙂 And, that means that this post is really short!  I hope you get some inspiration from my meals!  

Breakfasts:  Kodiak power cake pancakes

Lunches:  Spinach salads with chicken and Brussels

Snacks:  carrots, hummus, venison sausage, apples, and bananas

We went grocery shopping Saturday night.  The only things that I bought for the week were some more spinach, an orange, and some bananas.  I decided to use up the food I had in my freezer.  I was supposed to have a lunch with co-workers on Monday, so I didn’t meal prep until Monday night.

I thawed my chicken, and then I cut it up into little chunks.  I cooked it in a skillet with Italian dressing, minced garlic, and Italian seasoning.  This was my first time cooking it like this and it turned out really well!  The dressing kind of poached the chicken and it made it so flavorful and juicy. 

While that was cooking, I steamed some baby Brussels sprouts.  I seasoned them with salt, pepper, and a little garlic powder. 

Then I threw it all together!  I told you it was simple!  I eat these salads with Olive Garden dressing. 

Next, I cut up an orange and made a pitcher of flavored water.   (These usually last maybe 2 days before I drink it all.)  Then I cut up a lime to put in my water as well. 

I also cooked a few batches of pancakes for breakfast.  I only do these for a couple days at a time.  I haven’t tried to see if they will last all week or not. 

For snacks this week, I have carrots and hummus, venison sausage, apples, bananas, and protein bars.  I also had some leftover spinach so I can make some green smoothies! J  (And, it will probably end up in my scrambled eggs at dinner too.)

    MMM Brussels Sprouts are the best!!! 😀 😀 😀 I love grating them/shredding them and sauteing them with spices and veggie broth–to die for!
