Great Food & Great Running

Hi Guys!!  Happy October!  I seriously can’t believe it’s October!  Where is the time going?  I hope you all had a great week and are having a good weekend!  I had a pretty good week.  I was really busy with work, and had a extremely long day on Tuesday which made the whole week feel long.  Even though I was so busy, I had an awesome training week and I can’t wait to share it with you!

Monday –Today was awesome!!  My food was awesome!  So glad I meal prepped! The weather was awesome!  And my run was awesome!  Food wise – I started my day off with a good breakfast!  I had oatmeal with a little brown sugar and some dried cranberries. 


Then for lunch I had ground turkey, bell peppers, onions, rice, and avocado with a small salad on the side. 


The weather was absolutely perfect!  It was the perfect running weather so I couldn’t waste it.  I had 40 minutes of cross training to do, but I decided to go for a run instead.  The temperature was 73, and the pollen count was way down!  As I was getting ready, Shannon texted me to see if I wanted to run.  Of course I said yes!  The route that we run is only 3.5 miles, so I thought I would get a head start on her because I wanted to run at least 6.  I knew she was getting ready and I figured I had time to get a mile or two in before she made it to my house.  I was about a mile and half in and she texted that she was on the phone and would be a little longer.  I ended up getting in 3.75 miles before she made it to where I was.  Then we ran another 3.5 miles together!  This summer when we ran, we would have to stop and walk several times because it was always so hot.  But, we didn’t do that this time.  I never got tired! It’s the Spark!   I felt amazing and I could actually breathe!  The last couple of weeks I was really getting discouraged because I haven’t been running very well and I thought it was just me not being in good enough shape.  I was even questioning if I should continue with this training or just call it quits because I really felt like I could not physically do it.  But, today proved to me what the heat and pollen really do to me.  


After my run, I took Jake on a mile walk.  He was really enjoying the cooler weather too.  He kept running and jumping around.  He wanted to play a lot!  Then, I rode my bike for three miles.  I could have kept going, but it was right before dark and I actually started getting really cold, so I quit.  Overall, I had a great day of working out and I felt so good!  I wish I would have that much energy everyday!  Today I also tried some new to me crackers.  They were so good!  They have a slightly sweet taste to them.  It’s the perfect sweet and salty mix. 


Tuesday – I had the same breakfast and lunch today that I did on Monday.  Today I had 4 miles scheduled, but I had an extremely long day at work, so that didn’t happen.  I left for work at 7:10 am and I to work until 8:30 pm.  I did have a short break in the afternoon and got to go home for about an hour and half.  So, I did a quick circuit workout before getting ready to go back for the evening.  It was a long day and I was so happy to crash on the couch when I got home!

Wednesday – I had the same breakfast and lunch again today.  I love meal prepping! Since I missed my four miles on Tuesday, I decided to run it today.  But, I had a long day at work and by the time I could run, I already knew it wasn’t going to be a good one.  As much as I wanted to take a nap, or lay in my recliner and watch TV, I didn’t.  I took Jake on a mile walk first. 


It was back up in the 90’s and he got pretty hot.  After walking him, we fed the horse some sugar cubes.  


Then, I headed out on a run.  I made it a mile before I started having difficulty breathing.  I slowed down and walked a little ways, and then finished the second mile with walking and jogging.  I ended up making it two miles before I had to quit.  It was a little frustrating, but after the epic run I had on Monday, it’s okay.  I know now that it’s just the weather affecting me.  So, I was okay with it.  Once it did cool down a little, closer to dark, I rode my bike for a while. 



I didn’t wear my watch, so I’m not sure, but I think I rode around 3 miles.  Jeremy and I cooked hamburgers for dinner and watched the new Kevin James show, Kevin Can Wait.  We really like him and loved The King of Queens.  I thought the new show was funny, but not as funny as other things he has done.  And, we laughed at Jake all night.  I don’t know what got into him, but he was very entertaining.  He was running around the house with his tail tucked, he kept jumping up on us and barking.  He brought all of his toys into the living room and kept jumping up and putting them in our faces.  And, he tore one of them completely apart!  He was hilarious!  When he finally calmed down, we actually went to bed early – just because I was so tired that I could not keep my eyes open. 

Thursday – I was ready for something different this week for lunch and breakfast.  So, I had some pumpkin pie overnight oats for breakfast. 


And for lunch I had a grilled chicken chopped salad from Subway.  It had lettuce, spinach, bell peppers, banana peppers, cucumber, onion, and Subway Vinaigrette dressing.


 I slipped away for a short walk during my afternoon break at work.  The weather was so beautiful and I wanted to be outside!    


As soon as I got home, I headed out for a run.  I got in 4 miles.  My head was not in this run and I was starving!  It probably didn’t help that someone was grilling burgers and that the Domino’s car drove by 4 times while I was out.  After my run, I took Jake for a walk.  


Jeremy had late games so I decided to treat myself to some sushi.  We have a new Japanese restaurant in town that we haven’t tried yet so I went and ordered some sushi to go.  I had some salmon sashimi, a smoked salmon roll, and a crab meat roll that had crab, avocado, and cucumber.  


They were all good, and I will definitely be eating there again!  It’s not as good as the place in Norman that my cousin takes me, but I’m excited that I have somewhere in town that I can go eat it when I’m craving it.  

Friday – Today I had meetings all day long at work!  I hate sitting still that long.  Usually when I leave work, I have between 9,000-10,000 steps.  Today, I had 4,000.  I get so bored sitting!   I did have a good lunch!  I went out with a friend for lunch and I had a cranberry pecan chicken salad sandwich.  I’m sure it was a million calories, but it was so good that it was worth it!  


I had another meeting after lunch and I was having a hard time sitting still.  As soon as I could get out the door, I was gone and ready to run!  I headed to the park to run 8 miles.  


I didn’t know what we were doing over the weekend, so I thought I would go ahead and get my long run out of the way while Jeremy was umpiring!  I ran 8 miles and had a pretty good time.  I am starting to see an improvement in my time and I’m getting excited!  


After my run, I took Jake on a mile walk.  He has been doing really good on walking more than he usually does.  I think it’s because it’s cooling off.  


Saturday – I took a rest day today!  

Sunday – I’m planning on running 4 miles today.

    LOOOVE this post. I also love the Garmin Forerunner- is that your watch?! It looks just like the one I have! Thanks for sharing your week. That sushi looks tooo good and now I’m craving it. Happy running !

    Brown sugar oatmeal reminds me of my childhood. I can remember my Mom cooking it on top of the stove and adding brown sugar, butter, and lots of milk. It still tastes best that way. You had a great training week! The pollen (or lack of it) really makes a difference for you. I’m curious, does Spark have caffeine? I try to avoid caffeinated items when running. My dogs will act silly like Jake did sometimes too. They certainly provide a lot of entertainment. Thanks for linking, Tara!

      That oatmeal sounds delicious! The pollen is so annoying! The Spark has 120mg of caffeine…I didn’t realize it had so much! I guess that’s why it works so well!

    I finally ran outside Friday, and the pollen didn’t seem that bad. I didn’t have trouble breathing either, and I’m excited to get outside more often. My cardio needs it since I’m not sharp for outside yet. The treadmill’s fine, but it doesn’t account for all the divets and slopes I get around my neighborhood.

      I’m so sorry I’m just now responding! Your comments went into my spam folder for some reason?? I hear you about the slopes outside. They make such a huge difference. I could run forever on a treadmill and then get outside feel completely worn out in a few minutes! LOL It’s crazy how much difference there is!

    Those pumpkin pie oats sound delicious. Tis the season I suppose. I love sushi. The restaurant I work out just started half price sushi for the off season on Mondays. Jake is just so darn cute!

    I miss running! I now live in the city, so running outside is not really an option with all of the traffic lights and the car fumes that make my asthma go crazy!
    It looks like you have so much space for running outdoors, I’m a tad jealous 🙂

    Finding a good sushi place is always the best. I just found one near where I live and am so happy about it!

      I am super excited about the sushi!! I hate car fumes. Where I run, my biggest problem is people burning brush fires. Lol. But I’m glad I can run outside. I feel for you not getting too. 🙂

    Great week for you, but Summer temps are back for us here in Mississippi. I knew it wouldn’t last long. Back in the mid 90’s today. I did see where it may dip in the 50s this weekend!
    Speaking of spark I tried one or part of one before my 9 miles. I think I didn’t have enough water and too much spark. 🙁

      We’re back in the 90’s too today. I’m so tired of the heat! I was loving the cooler weather! This weekend it’s going to be in the 70’s for a day, but back up around 90 after that. Spark is too strong if there isn’t enough water.
