Fun and Friends

Hi Guys!  I hope you all had a great weekend!  I sure did!  It was full of fun and friends! The temperature was still so hot, but we spent all day Saturday outside.  Jeremy was umpiring a baseball tournament this weekend so I spent some time at the games.  Let’s start with Friday night. 
Friday night, Jeremy got done umpiring early so we hung around the house.   I was super tired and just wanted to relax.  One of the guys that was umpiring the tournament with Jeremy was coming to stay the night with us after his games were over.  We ordered pizza and some chicken wings from Pizza Hut.  I usually like their pizza, but this was probably the worst pizza I have ever had from there.  Right after we ordered it, they called back and said they were out of all of the crusts except for thin.  They said we could wait on them to make some more and it would be about 30 minutes extra.  We said that was fine because the games still weren’t over yet.  I don’t know what went wrong, but the crust was horrible, and the toppings weren’t cooked much.  But, the guys were hungry and they ate it anyways.  We stayed up visiting until after 1!

Saturday morning, the guys had to leave by 9:30, but I slept in a little bit.  I had some Spark before going to the games….just because! I really liked this flavor!

 I headed to the games around noon.  One of my best friend’s husbands is the coach at the school that was hosting the tournament.  She and I have been watching our husbands coach and umpire games together for 10 years.  Sometimes it gets really interesting!

Another one of my good friends came to the games to hang out with me.  We sat and talked all afternoon.  We went to high school together and she has just moved back so we’re having fun catching up!   I spent the day “watching” ballgames and hanging out with friends.  It was super hot outside, but I had a lot of fun spending time with my friends.

Saturday night Jeremy and I went to our favorite restaurant for dinner.  Guadalajara was playing soccer and the place was packed with people watching it.  It was very loud and entertaining in there!  I just love the atmosphere!  I ordered a fajita chicken plate to share with Jeremy.

And, I also ordered a carne asada taco, just for me!  I was so hungry, I had hardly eaten anything all day.

After dinner, we went to Walmart to get our groceries and stuff to pickle okra.  Seriously we have sooooo much!  I never want to see another piece of okra again!    Then we went home and crashed! 

Sunday morning we got up and I ran to town to try get some peppers to put in the pickled okra.  I also went over to my parents to take my dad a birthday cake and card.  They had been gone on a cruise all last week, so they celebrated his birthday there.  My mom brought me some gifts since I went over every day while they were gone to check on her cats.  Who were not very happy to see me, and one of them bit me!    She brought me a handmade backpack from Mexico that has a Yankees emblem on it.  She also got me a black Rustic Cuff bracelet (which I’ve been wanting) and a new Michael Kors crossbody purse!  I’m so excited about it!

When I got home, I meal prepped my lunches for the week.  I love the salads I had last week, so I made that again.   It has lettuce, spinach, ground turkey, sautéed bell peppers, onions, and avocado.

I spent the rest of the afternoon cutting up okra, breading it, and freezing it.

Then, Jeremy and I tried to can some.

It was actually pretty easy.  I think they turned out okay.   I don’t eat them, so I guess we’ll see if Jeremy likes them!

      You should try it! I love it roasted. It gets crunchy and has such a good flavor. I really don’t know how to describe it. It’s just good!

    Sounds like a fun weekend! I’ve never canned anything because it makes me nervous! I would like to make and can my own jam though!

      I would too. I’m thinking about trying it sometime. This wasn’t as hard as I thought it would be at all!

    I tried a small chunk of deep-fried okra once in my life and I thought it was pretty good! It was different than what I was expecting. It sounds like you have a lot of it hahaha

    And I have yet to can anything! I’m only in an apartment right now with no balcony, therefore don’t have room for a garden! I’m hoping one day I can have a house with a huge garden so I can start canning! Looks like you did a great job!

      I had the same dream! LOL But the garden is a lot more work than I ever expected! But, it is pretty cool to be able to eat food that I grew. I really want to plant some fruit next year and learn how to make jelly!

    Sounds like a full, fun weekend.

    I ran a virtual 10k on Saturday morning and then we went out and bought a new couch (long overdue!) and I can’t wait to get it delivered!
