Hi Guys! Today I’m linking up for another What I Ate Wednesday post. I have a recipe that I want to share with you. Last week I made some epic juicy baked chicken! EPIC! It was tender, juicy, full of flavor, and delicious. Which is not usually what you get with baked chicken. I can’t take all the credit though. After all I just followed some instructions and threw it in the oven. It’s not that hard! This was definitely an easy thirty minute meal, and would be great for busy nights! All you need is chicken and the breading kit that I found!
Last week when we were grocery shopping, Jeremy was checking out the cake mixes. I walked a little further down the aisle and came across this handy little chicken breading kit. There were four different flavors, and I chose this one. The directions looked easy enough, and it included everything I needed except the chicken. I was sold!
The kit came with a breading packet, Parmesan cheese packet, and a basil cream sauce packet. The instructions on the back of the box even had pictures telling you how to bread the chicken!
The first thing I did was set up my breading station and tenderize my meat! I love doing that. Even Jeremy took a turn pounding on the chicken breast!
When we were done beating the chicken, I dipped it first in the basil cream sauce. I used my hands to spread the sauce around and make sure that it covered the chicken. Then, I dipped them into the breading mix. I made sure each chicken breast was completely covered in breading and then I placed them on a baking sheet.
Into the oven they went for 25 minutes.
While they were cooking, I grilled some zucchini and squash to go with them.
When they came out of the oven, I checked to make sure they were done and I let them cool for a minute.
Then we tasted! I could not believe how juicy these chicken breasts were. Anytime that I have ever had baked chicken it is dry and needs lots of dipping sauces just to get it down. This was the furthest thing from that. The creamy basil sauce must have kept all of the juices inside. The breading on the outside got very crispy in the oven.
They were like oven fried chicken breasts. The sauce and the breading made them so flavorful. You could taste the basil, and the sauce sort of melted into the chicken. It was definitely creamy and crispy! I can’t wait to try the other kinds.
