Hi guys! Today I’m linking up for another WIAW. I’m doing this one a little bit different though. My eats are coming from the holiday weekend. I hope everyone had a great holiday weekend and got to eat some awesome food! I had a cheat weekend! But, even though I ate not-so-healthy food, I tried not to eat a lot of it, just enough to enjoy it. But, it was all so good, that it was worth it! As much as I hated for the weekend to be over, I was ready to get back in the swing of working out and eating healthier. I do so much better when I’m home and am fixing my own meals. So, here’s a recap of my Fourth of July weekend and all the great food I had!
Friday night, Jeremy and I went to our favorite taco joint. We ordered some tacos to share. I had a pork taco and a fish taco. He had carne asada and ground beef. I really liked the fish taco! I will be ordering that again.
We were up late and were really tired, so I missed out on my run Saturday morning. I was planning on meeting my new running friend, but I had to cancel on her. Saturday morning we got up and loaded up for the lake. Jeremy’s aunt and uncle came through town to pick us up. Before heading out, we grabbed some lunch. I forgot to take a picture, but I had a grilled chicken breast and side salad.
After lunch we headed to the lake to meet up with all the family. We got to the lake house around 4:30 and waited for everyone to come in off the water. While we were waiting, I snacked on some strawberries. They were so much better when eating them with the princesses!
When they all got there, we ate dinner. Jeremy’s cousin grilled bbq chicken and polish sausages. We had a huge spread! I ate a chicken breast, salad, and a couple of sausages.
For dessert, Jeremy’s aunt made vanilla ice cream and banana ice cream. Banana ice cream used to be my favorite! Unfortunately, I can’t eat ice cream so I had some strawberry short cake instead.
We stayed up late hanging out. 😉 M brought her hammock!
Then, Jeremy’s cousin’s four year old daughter wanted to sleep with us. She had her mind made up! I came down the hall into our room and she was sitting in the middle of the bed waiting on us! 🙂 We didn’t care, but I didn’t get much sleep because every time she moved or made a noise I would wake up to make sure she was okay.
Sunday morning I woke up early and headed out for a run. It was super humid! I only made it 2 miles because there were too many dogs that kept running after me. The lake house was literally in a no cell service zone, so I was afraid that if I got bit I wouldn’t be able to call for help.
After my run, I tried to do a tabata workout with Jeremy’s cousin. She kicked my butt! I didn’t last very long with her. I did okay for the first few sets, but then I started getting nauseous. It was the same thing that’s been happening while I’m running. I don’t know if it was because we were outside…who knows? I enjoyed what I was able to do and will try it at home now. I showered off quickly and we headed out to the lake. I had a granola bar on the way.
We spent all day out on the water.
I hung out on the pontoon while all the kids wake boarded and skied. I just relaxed and worked on my tan. I did fish a little bit when I got bored and I actually caught something!
We ate lunch on the pontoon. We had all kinds of sandwiches to choose from – turkey, chicken salad, ham salad, egg salad, and bologna. I had chicken salad with some crackers. It is the BEST chicken salad I have ever eaten! Jeremy’s cousin gets it from a place in Dallas. It has apricots in it! I want to find a recipe and make my own.
After lunch, when all the kids got back on the ski boat, Jeremy and I headed out on the jet ski for a little while.
It was around 6:30 before we headed back in and I was worn out! When we got back to the house, we rushed around to get dinner ready so we would have time to eat before the fireworks began. We had burgers and hot dogs. Again, I forgot to take a picture! I had a cheeseburger and some chips! We had some festive bracelets and jewelry for the fireworks! Mine took a dip in the toilet, but I didn’t know until after our 4 year old cousin put them on me.
Right before dark, we headed up to the lodge to watch the fireworks. We sat down by the water and enjoyed the show! Right before the fireworks started, it started thundering and lightning pretty bad. So, they did the fireworks really fast. But, I liked it better that way! They were shooting off 3 or 4 at a time. I love watching them over the water. The first Fourth of July that Jeremy and I spent together when we were dating, we watched the fireworks from a boat in the water! The show lasted about 20 minutes.
By the time we got back to the house and I showered, I could barely keep my eyes open. I made it until around 10:30 and I crashed!
Monday morning we slept in until 9. I had some honey nut cheerios and cherries for breakfast.
Around 10:30 when everyone was up and ready we headed out to the water. It was overcast and a little chilly but that was okay. Jeremy and I hung out of the pontoon again.
A couple of the boys hung out with us, so I swam with them. They kept jumping off the top trying to splash everyone on board. Jeremy even jumped off with them!
Jeremy fished a little bit and caught three small fish. The boys would take them off the hook and play with them in the water before letting them go.
I had chicken salad again for lunch! I love it! We stayed out until 3, and headed back to the house so everyone could get ready to go home. We got back to town in time for dinner. But, there wasn’t anything open, so we went to Taco Mayo to try out the new fresh mex menu. I ordered a chicken taco salad. It had cilantro lime rice, black beans, shredded lettuce, shredded cheese, and a tiny bit of guacamole. It was really good and all fresh!
After dinner we headed over to my parent’s house to watch more fireworks. This show was much better than the lake!
My mom also had homemade ice cream and a ton of fruit. I took some of the left over strawberry shortcake and then sent it all home with my grandparents so I wouldn’t be tempted to eat it!
We didn’t get home until almost 11:30. It was a great holiday weekend and was filled with great food! I had so much fun spending so much time with our family! It did take me a full day yesterday to recover from all the go, go, go! I also drank a ton of water to flush out my system! I loved everything about this weekend, but I was glad to be home and getting back into my routine. I hope you all had a very safe and fun weekend!
