Protein Powder Crepes

Hey guys!  How are you on this Wednesday?  Today I’m linking up for another What I Ate Wednesday post.  But, before I get to what I ate, I have a delicious recipe that I want to share.  

WIAW is coming from Monday of this week.  My sweet tooth started nagging me Monday afternoon during my workout.  When I was finished I decided to experiment a little bit with my Bob’s Red Mill protein powder and have something other than a shake.  When we went shopping last week, the place that I got lunch at also served crepes, and I really wanted one.  But I passed.    My roommate in college and I used to make crepes all the time, and they are one of my favorite treats.  But, I literally never make them.   I don’t know why.  So, I decided to try to make crepes out of my protein powder and they turned out to be delicious!

All you need is protein powder, one egg, and almond milk.

I whisked together one scoop (1/3 cup) of vanilla protein powder, one egg, and a half cup of almond milk.  I actually had to add a little more milk, so it was probably more like 3/4 of a cup.  You want the batter runny.

Then I poured some into a hot skillet and waited until it was bubbling before I flipped it.

You don’t want to pour a lot, crepes are thin.  This mixture made 4 crepes.  The protein powder made them sweet, so they didn’t need any sugar in the batter.

I filled mine with bananas and dark chocolate chips, but you could fill them with anything!

This was a sweet treat that I could enjoy without feeling guilty!  I will definitely be making these more often.

Okay, now on to what I ate Wednesday Monday.

I started my morning early with a run.  I was planning on just running a couple of miles, but that turned into 5 and then a half mile walk with Jake.  When I was done, I fixed a Bob’s Red Mill chocolate protein shake.  It was the powder and almond milk.

Then, for lunch I had a turkey and swiss sandwich with mustard on 45 calorie Sara Lee bread.

After lunch, I headed to the pool for a few hours.  When I got out, I was hungry so I had some pineapple for a snack! 


Later that afternoon I worked out and that’s when my sweet tooth kicked in.  So, I made the crepes. Then for dinner, we had breakfast.  My favorite!  I fixed scrambled eggs, turkey sausage links, and wheat toast with low sugar jelly.  


It was a full day of good eats!
