Hello Everyone! I hope you all had a great weekend! I’m going to catch you up on what I did this weekend. This was the first weekend in a long time that I actually got to sleep in, and didn’t have to get up early to run. It was very relaxing! This was also the first weekend in a long time that we didn’t have anywhere to go, or really anything to do. We just kind of played it by ear!
I left off my weekly recap on Friday night. We were waiting out the storm that hit. Thankfully, it wasn’t bad, and it was over quickly.
Since it had started storming, we were planning on staying in for the night, but we changed our minds when the storm passed. We got ready and went out to dinner. A colleague gave me a gift card to Santa Fe so we went there. Unless we have a gift card, we don’t ever eat here. It’s not that good…but, since it was free we did. We had the best service! Our waiter knew Jeremy, so that probably helped, but he was on top of everything! We never went without our drinks being full, or anything else we needed. He was right there checking on us the entire time. Our meal came out super fast too! Jeremy ordered some chips and queso to start with, but neither of us ended up eating any of it because our salads came out with it.
I forgot to order mine with ranch on the side, so I couldn’t eat much of it because it was swimming in ranch.
For our entrée, we ordered a combo to share. I think it’s called the Chuckwagon. It comes with two steaks, two grilled chicken breasts, and two slabs of ribs and they are served on top of caramelized onions and mushrooms.
It also came with baked potatoes, so I had a sweet potato. I ate a chicken breast and some onions, and a couple of bites of ribs. The baked potato was really good. The chicken was seasoned well, but it was really dry. We had some friends come in and sit at the table next to us, so we sat in there for a long time after we were finished just talking to them.
Saturday morning we slept in until around nine.
Then we went over to take some things to my mom, and ended up visiting with my parents for about an hour. After that, I went with Jeremy to help him build a fence for one of his clients. I did more supervising than building!
We worked on it for a few hours and got the posts set. The client wanted a four foot privacy fence, so it all had to be done by hand. You couldn’t buy panels that size. When we got home, I took Jake for a walk/jog.
Then we went home and cleaned up and went to eat dinner. We went to my favorite Mexican restaurant.
I forgot to take a picture of what I ate. Oops! I was so hungry from working all day, that I devoured it as soon as they set it on the table!
We ordered queso fundido for an appetizer, but I ate it as my meal. (plate of melted cheese) Jeremy got the fajita buffet and it looked really good. But, after chips and salsa and the queso, I was full! On the way home, we stopped and rented Sisters. When we got home, Jake was at my father-in-law’s across the street and he saw us pull in. He started barking so we walked over there to see him. He wanted to eat his dinner. He’s kind of a baby and wants to lay down when he eats. He will stare pitifully at his bowl until you dump it on the floor. So, Jeremy put it on a plate for him. He’s really spoiled!
Then we went home and watched the movie. It was pretty funny!
Sunday morning we were lazy, and laid in bed until around 10. We finally got up when our doorbell rang. It was our neighbor, and she was on her way to catch a plane for work and her dog was lost. She woke up and her gate was standing open and he was gone. I had found him Friday afternoon and took him home and the gate was open then too. We told her we would look for him, and we did all day but didn’t find him. I’m hoping he will get hungry and come back home.
I was actually very productive on Sunday! Once we got up, I cleaned the house, and then went walking around looking for the lost dog. When I got done walking, I helped Jeremy cut the boards for the fence.
We had to cut a ton of them, and then cut the tops off of them so they were pointed. It took most of the afternoon. When we finished, I took Jake for a walk and looked some more for the dog.
Then I went home and washed off all the sawdust and baked Jeremy some cupcakes. He requested chocolate cupcakes with chocolate icing – it’s his favorite.
While the cupcakes were baking and cooling, I did an ab workout from Barbara on Instagram (blogilates_princess). Then I did an arm workout that I found on Pinterest, and some squats. I’m doing the Squat Away May challenge.
I love this challenge, it really does help! Before we ate dinner, we drove up and down the road one last time looking for the dog. But, we had no luck.
Right before I started dinner, I threw together some food for my lunches this week. I love meal prepping because it helps me to make good choices instead of eating fast food, or skipping a meal and then overeating later. I didn’t go to the grocery store Sunday, so I had to get creative. I had some chickpeas, canned carrots, frozen broccoli and green bean steamers. I cooked it all and let it cool while we ate dinner and then I divided it up into containers for the week.
For dinner, I made Italian sub sandwiches. We used to be able to buy these at Mazzio’s, but they quit making them. So, I make my own. Plus, it’s cheaper to do our own too. I had sub rolls that I toasted in the oven first. Then I put ham, salami, and pepperoni’s on one side. I used turkey pepperoni on mine and couldn’t tell any difference. On the other side, I put Olive Garden Italian dressing, cheddar cheese, and provolone. Any white cheese will work. I usually use Swiss, but the grocery store was out when we went. Then I stuck them under the broiler until the cheese was melted.
We ate these while we watched the Yankees and Red Socks play and then went to bed.
I really enjoyed this weekend because we were able to relax. I love going places and seeing people, but sometimes it’s nice to not have commitments and be able to hang out at home.
