The Perfect Weekend

Hi Friends!  Another great weekend has come and gone.  I live for the weekends!  How was your weekend?  Did you do anything exciting, or was it low-key?  Mine was awesome!  I had another much-needed relaxing weekend, and it was perfect.  We didn’t have much going on, so Jeremy and I got to hang around the house and spend some time together! 

Friday night, we decided to stay in and cook dinner.  We were both pretty tired, and we both had to get up early on Saturday.  I had to run, and Jeremy had five softball games to umpire.  So, I stopped by the grocery store on the way home and picked up some steaks and stuff for spaghetti.  We cooked dinner together, which I love, and it was really good.

After dinner, we took our leftovers over to Jeremy’s dad, and visited with him for a little bit.  And Jake, because he was staying over there for the night.

Then we went home and went to bed early!  I didn’t even make it through one episode of 2 Broke Girls. 

Saturday morning, my alarm went off at 7.  I did not want to get up!  But, I drug myself out of bed and fixed some scrambled eggs and an English muffin.  I headed over to my parent’s and parked my car there and ran 3 miles on my own.  Then I went back to my parent’s and my dad and I ran 17 miles.

When we got back, my grandma was there so I visited with her and my mom for a few minutes before going home.  I tried to take an ice bath when I got home, but I was a big wimp and couldn’t stand it.  So, after a nice hot shower, I laid down to take a nap.  I was exhausted after my run, but I could not go to sleep.  I dozed off and on for a couple of hours and then I got really hungry.  I know I am supposed to eat when I get done running, but I just wasn’t hungry.  About the time I got up to fix a snack, Jeremy came in.  We watched OU get beat by Villanova.  Then we went to the grocery store.  I bought tons of fresh veggies to eat during the week!

After taking the groceries home, we went to eat dinner.  We went to my favorite Mexican place.

We shared some queso fundido.  It’s just a plate of melted cheese, and you eat it on tortillas.  It’s so good!  And, I’m sure it’s awful for me, but I thought I earned it!

Then we shared some enchiladas and rice.

After dinner, we went home and watched TV until we fell asleep. 

Sunday was the best day!  We slept in, and then I roasted all of my veggies!  I love roasted veggies!  I decided that I would roast them all and eat them for lunch this week.  I also roasted some chickpeas to go with them.

Then, since the weather was so beautiful, we went for a long ride in the Jeep.  We don’t have the top off yet, but we did take the doors off.

When we got back, we took Jake to feed the horse, and move her to another pasture.

Then, we sat on our back porch until the sun went down.  I just wanted to be outside all day! 

For dinner, Jeremy wanted to grill hot links, smoked sausage, and brats.  I like all of those, but I always complain about how many calories they have and how greasy they are, so he bought me some turkey links.

They were so good!  I really could not tell a difference in the taste, and they weren’t as greasy as the regular brats.  I also grilled some zucchini.

We had so much food, so Jeremy’s dad came over to eat with us.

After dinner, we played with Jake and then watched the Mets and Royals play.  I fell asleep before it was over!  I am so excited that baseball has started!    

This wasn’t an exciting weekend, but sometimes it’s best to just relax!  I really enjoyed being able to get up on Sunday and know that I didn’t have any plans for the day!  I feel like my days are always planned out, so it was really nice to not have to be on the go all weekend.  I’m also glad that I got my last really long run done, because it takes it so much time to run and then recover afterwards.  And, I’m really excited that baseball has started!

    That looks like a pretty perfect weekend to me girl! Running, relaxing and eating! Plus all that time outside!
    I love that you ran with your father. My dad and I do races together. We don’t run together but it is special to me that we both are a ;part of the same events and talk running.

      It’s so great to have someone to talk running with! My dad was talking during our run about how special this is because he’s never doing it again! Lol
