Hi Everyone! I hope you are all having a great week so far! I am, and a very busy one too! Let’s get caught up!
On Monday, I hung out with Jake all day. He loves when I do that! When I got up that morning, we went for a hour long walk. The weather was absolutely beautiful! I will take 80 degrees in March any day!
He got a little thirsty on our walk.
Once we were done, we sat on the porch for a little while resting and watching the cars go by.
Then we went inside so I could get some work done. Jake was so worn out from his walk that he napped in front of the door.
For lunch I had some turkey, pickles, and cheese. I roll these up and eat them like that.
Since the final bachelor episode was Monday night, I wanted to be able to watch and not be cooking dinner during it. So, I started some chicken in the crockpot. I had picked up some drumsticks the last time I went to the grocery store because they were on sale and I decided to barbeque them. It was so simple. I laid them in a single row in the bottom of the crock pot.
Then I seasoned them with Lawry’s seasoning salt, pepper, and paprika. And I then covered them with barbeque sauce.
I cooked them on low for 6 hours. They really didn’t need to cook that long because they were falling off the bone when I tried to take them out. Next time I might cook them for 5 hours. After pulling them out of the crockpot, I put them under the broiler for about 5 minutes so the skin would get crispy.
We ate them with salad and they were absolutely delicious! They were tender, juicy, and so flavorful! I can’t wait to make these again.
I also had some chicken breasts that I needed to cook, so I put them in a crock pot too. I was going to season them with a ranch packet, but I didn’t have any. So, I just grabbed whatever spices I thought sounded good. I think I used Lawry’s, pepper, paprika, parsley, and onion powder. I also threw in a couple of spoonfuls of minced garlic, and then I covered them with chicken broth.
I also cooked them for 6 hours on low. They were tender, but they ended up being a little dry.
I shredded them up and ate them in a salad for lunch on Tuesday and Wednesday.
Later Monday afternoon, I took Jake for another walk, and then we sat on the porch again. He loves doing that.
Then, that night we ate dinner and watched the Bachelor.
After lunch on Tuesday, I ran over to my grandma’s to hook up some new cable boxes. Our cable company has gone all digital, so you have to have a box for every TV. Then, I went to visit my friend because I bought her new baby a bow.
I stayed over there all afternoon cuddling the baby. She is growing so fast, and is so alert and wiggly! She’s also super cute! I had a dentist appointment later in the afternoon. I hate going to the dentist, but it was just a cleaning, and she said my teeth looked great! That’s always what I want to hear, because I definitely don’t want to have to get any fillings. I seriously get major anxiety about going to the dentist. Teeth really gross me out!
We ate leftover chicken for dinner, and stayed up late watching shows on our DVR.
I woke up early Wednesday and ran over to help my sister with some stuff. Then, Jeremy and I had to meet with our accountant to get our taxes done. We got a new one this year, and I was super impressed! We were in and out in 45 minutes, and she already had them filed! The people that we have been using for the past several years take several weeks to get them done, so this was awesome! Then we went to pick up Jake at the groomers.
When we got home, I headed out for a run. I had 9 miles scheduled but I only did 5 because the pollen count was super high, and I was having a really hard time breathing. It was so bad that I couldn’t even talk without wheezing. But, somehow I made it through the run, and did it pretty quickly. I listened to the lasted Serial Podcast and it helped to pass the time.
After my run, I walked for another mile and listened to a Run Buzz podcast episode. Then, Jeremy and I took Jake for a walk.
I was up early this morning for a 9 mile run. But, I only got two in because it started storming. It’s supposed to quit later in the day, so hopefully I can run again tonight and get my 9 miles in. I’ve got a busy day planned, so I’m going to get to work. I hope you have a wonderful St. Patrick’s Day. Don’t forget your green!
