One of my favorite foods during the holidays is my mom’s strawberry bread. This is something that we have had during Christmastime for as long as I can remember. I remember helping my mom fix loaves of this and giving it to my teachers as a gift. This bread is so delicious, and there is a reason why we only have it once a year. I’m sure it has a million calories in it, but I splurge when my mom makes it!
The bread is moist and has a strawberry cream cheese filling. It is very rich and is worth every calorie! I decided that I would make this bread for our Christmas Eve dinner. For the bread you will need:
3 cups flour 1 tsp cinnamon
2 cups sugar 1 tsp. salt
1 cup oil 1 tsp baking soda
2 10 oz. pkgs. Frozen strawberries (thawed)
4 eggs well beaten
Heat your oven to 350 degrees and grease and flour 2 loaf pans.
Strain your strawberries, and keep the juice. (You will use it for the filling.)
Combine flour, sugar, cinnamon, salt, and baking soda in a large bowl and mix well.
Make a well in the center and pour in the oil and beaten eggs. Stir by hand.
Add strawberries and stir gently to incorporate.
Pour into 2 loaf pans.
Bake at 350 for 1 hour or until completely done.
Cool and slice very thin.
For the filling you will need:
1 8 oz. pkg. cream cheese
Powdered sugar – amount is based on your taste, how sweet do you want it. I used about 3 tablespoons.
Beat the cream cheese and sugar together until fluffy and smooth. Then slowly add in the juice. You won’t need all of it. Make sure you don’t add too much. You don’t want the filling to be thin and runny.
Once the filling is mixed, spread it between two slices of bread.
Store in the refrigerator, or it can be frozen.
