Playing Catch Up!

Hi everyone!  How’s it going?  I know I’m a little behind on my posts, but it’s just because we have been so busy!  I have had a great weekend and had a really fun visit with some family.  So, let’s get you all caught up! 

Thursday night after we finished hunting, we left town and went to one of Jeremy’s aunt and uncle’s.  They live about 45 minutes from us and have a farm in the middle of nowhere.  They have an old farm house on the property that they have fixed up, so we stay in there when we visit.

Jeremy’s cousins were coming in also, so we could all go hunting together Friday morning.  I was so tired, that I bailed on the early morning hunting.  Getting up at 5:30 did not sound like fun at all!  I decided to sleep in.  But, too bad for me because right outside of my window was a ton of racket! They were weening the baby calves off their mom’s, so they cried all night and all morning!  They didn’t bother me when I went to bed because I was so tired that I went right to sleep, but they woke me up really early.  I tried earplugs, but they didn’t help.  So, I got up about 7:00 and worked on the computer.

When everyone came in from hunting, we had breakfast.  We ate gluten free pancakes, and they were really good!

After breakfast, I helped my cousin with her literature and chemistry homework.  The literature is easy for me, but the chemistry – thank goodness for google! Her chemistry class doesn’t have a textbook, how does a teacher expect someone to complete an assignment with no textbook?!  And, how do you teach chemistry without a textbook?  We spent almost 2 hours working on that ridiculous worksheet!  Her mom ordered the teacher’s guide off Amazon for her to have for the rest of the year!

When all the homework was finished, we went to ride four wheelers.  Jeremy’s uncle has thousands of acres and it is so peaceful.

We rode around for a a long time looking at all of the scenery.  The trees were beautiful.  They were filled with orange, red, and yellow leaves.

We went up and down several steep hills, and I think I overcame some of my fears of four wheelers, because I really had fun!  (I had a really bad four wheeler wreck in college, so I’m a little leery of them.)

Then it was time to go hunting again.  I wasn’t going to hunt, just the kids were, so I decided to stay and take a nap.  The sinus stuff was still hanging on, and after being outside most of the day, I was worried about sitting in the cold night air.  I don’t know if it’s the actual sinus infection, or the mucinex, or a combination of both, but it just makes me so tired.  So, I went up to the main house, to get away from the cows and took a nap for a couple of hours. 

When I woke up, the sun was going down.

I helped get dinner ready.  We had hamburger steaks, fried potatoes, fried okra, salad, and I made oven roasted okra.  Jeremy’s uncle has a garden and had a ton of fresh okra.  Everyone loved the oven roasted okra and said it tasted the exact same as the fried!

After dinner, we packed up our stuff and headed back home.  Jeremy’s aunt loaded us up with a lot of hamburger meat!  I’m really excited about that!  I love fresh hamburger meat.  It is so much better that the meat that you get at Walmart or Aldi.

We went straight to bed when we got home!  I wish we would have had more time with everyone, but the kids had ballgames and dance classes on Saturday, so they had to head home too.  It was a really fun day, and I always love getting to visit with family.

What I’ve Been Up To

I’ve done pretty much nothing this week!  I have been a little under the weather this week.  The strep throat I had last weekend turned into a sinus infection, so all I have really wanted to do is just close my eyes!  It always makes me feel so tired, but I can’t sleep!  Plus, if I don’t catch it early, this time of year a simple cold or sinus infection will always turn into a really serious respiratory infection.  And then I’m down for a long time.  So, I caught up on my shows (NCIS: Los Angeles and Law and Order: SVU) on the DVR and have spent a lot of time resting and napping trying to get well.  I’ve also been drinking a ton of extra water and taking lots of vitamin C!  

I have really tried to eat healthy.  I haven’t had much of an appetite, but when I am hungry I’m craving things like hamburgers and donuts.  I don’t know why I do that when I’m sick.  But, I resisted and have eaten yogurt and granola bars.  I also had a peanut butter (with real peanut butter) and jelly sandwich for lunch one day.  That’s comfort food for me!  Jeremy made me a grilled cheese one night, and ham and eggs another night.  I’m not real big on ham, but I ate a little bit and it was good.

I found a new game on the app store and it is really addicting.  You should try it out.  It’s called 1010!  It’s kind of like Tetris but instead of the pieces falling, you have to strategically place them on the board to try and clear lines.  I like it!

My insoles for my shoes came in, but I have not felt like running.  I did try them out and take Jake for a walk.  They were really comfortable and I’m excited to get to run in them! As per my doctor’s recommendation, I got the orthotics for my running shoes, and the other pair for my regular tennis shoes.

I have noticed this week that I have had very little pain!! I’m so excited about that!  I woke up yesterday feeling much better than I had all week, so I’m hoping this weekend to get out and get a couple of runs in. 

Yesterday when I woke up, I felt really good!  I took Jake for a walk, and I was surprised at how hot it was.  It was 91 degrees at 11 am!  This is October – where is the fall weather!?!?  At least it looks like it’s coming soon.

On our walk, I noticed that the trees are finally starting to change colors a little bit.  The reds and yellows are really pretty.

After our walk, we went home and had lunch and got ready to go hunting.  We are 15 days in to the hunting season, and we haven’t been one time!  I was really excited!   

 

We got to our blind around 4:00. We sat there until 7:30 and didn’t see anything! Partly because it was 95 degrees and partly because when it got cool enough for the deer to come out I had a coughing fit and couldn’t stop! But oh well, there’s always next time!

What’s in my bag?

I am always curious about what people carry in their bags.  Notice I said people, not just women.  It really sparks my curiosity when I see a man carrying a bag.  What could he possibly need to carry around all the time?  

One of my old roommates would carry a huge purse, and it was a catch all for everything!  I saw her pull so much weird stuff out of it, things like dog toys, socks, and even fish food.  It reminded me of Phoebe on Friends when she pulls a gold fish out of her purse!  I guess at least she was always prepared!

I tend to carry a smaller purse because if I don’t, I will fill up a big purse.  I don’t know why it works like that, but I carry more stuff when I carry a big purse.

The first thing I do not go anywhere without is hand sanitizer!  I am a germaphobic!  I have tons of small bottles and I keep one in every purse I carry.

I also have a tide pen with me.  Jeremy can be a little accident prone when it comes to dripping food on his shirt or pants, so the tide pen comes in very handy.

Victoria’s Secret lip gloss – this is THE BEST lip gloss I have ever used!  My favorites are the Strawberry Fizz and Juiced Berry.

Burt’s Bees and Sunscreen chapstick – I can’t stand to have dry or chapped lips.  Plus, I sit outside a lot of ballgames, so I always make sure I have sunscreen so my lips don’t burn.

I always have hair ties – just in case!

Granola bars – We are on the go all the time, and sometimes I need a snack.  I would rather have a granola bar with me so I don’t get tempted to run through a drive thru for something.

Eye drops – I can’t stand it when my eyes get dry.  They start to itch, and my contacts hurt.  So, I always have eye drops with me so I can avoid that!

I make sure to carry earbuds with me.  I go to lots of baseball and basketball games that Jeremy officiates, and I can’t stand to listen to people yell at him.  So, I always have headphones so I can tune them out.

The Best Workouts

I put together a list of a few of my favorite workouts.  I love running, but I also like to change it up a bit and add in something different.  

  1. Squat workout – I had a friend challenge me to the 30 day squat challenge a couple of years ago.  I loved it so much, that I continued to do it periodically.  I can tell a huge difference in the definition of muscles in my thighs when I do it.  For the days when there are a lot of squats, I will break it up into sessions so I can get them in all in.  I will also shake things up a bit and sometimes use dumbbells when I squat, or do different forms of squats.  This is definitely a workout that works! I found this workout on shrinkingjeans.net  They have a ton of good challenges!  
  2. Tracy Anderson arms – This workout is hard!! But, I think that means that it works.  It requires no weights, and it is 8 minutes of just moving your arms.  That may not sound hard, but it gets so tiring when you can’t put your arms down.  I may hate it when I do it, but I always am proud when I finish it. 
  3. Blogilates – I started Blogilates since I haven’t been able to run. And so far, I love it.  It’s something different, and it’s a challenge.  I like that after the workouts, I really feel like I did something.  I also love the community of Popstars that I have found and how supportive of each other they are. The picture is just one of the many challenges that Casey Ho has.  I subscribed to the calendar on the app so I get all of the monthly workout videos.  It’s just 99 cents a month!

Where To Get Running Motivation

Sometimes I am not motivated at all to run. I know I need to, but I just think of every excuse not to.  We are all motivated by different things.  So where do I get motivation to actually get my shoes on and get out the door?  The first place is other blogs.  When I read about what an awesome run someone had, it makes me want to do it to.  If I’m reading about how people are training for a race, it gets me excited to do the same.  It also helps me to ignore my excuses and just go.  I start thinking that I’m sitting here being lazy reading about all these awesome runs; I should be out there too.  It helps me to change my way of thinking and get out the door.

The next place I get motivation is from my friends and family.  If they are asking me about my runs I want to be able to give them a good answer.  It holds me accountable.  When my runner friends or family members talk about their own runs, I want to do the same.  Plus, isn’t the reaction you get awesome when you tell someone that you ran a bunch of miles today!

I also find motivation through quotes.  It’s kind of like a mantra.  I will read one and repeat it over and over to myself.  It helps me get through my run.  I find lots of motivation on Pinterest.  I save them on my phone, and tape them to my mirror.  They really help me on days that I’m unmotivated.

Finally, I get motivation from me.  This is the hardest one for me.  There are days that I just do not want to run.  I am so tired or I have too much to do.  But, I keep telling myself that this is for me.  My run is something I enjoy and it is for me.  I think about how far I have come, and what I am capable of now that I never dreamed I would be.  That gets me motivated to go.

Weekend Warrior!

 

I had a very exciting weekend!  Jeremy was selected to umpire the high school state baseball tournament.   He has done this for the past few years, and I love it because it’s like a mini-vacation.  We go to Oklahoma City, which is two hours away from us.  We get to shop and eat at restaurants that we don’t have in our town.  We also get to stay at a Hilton, which is awesome!  I was so excited all week for the weekend to get here, then I woke up on Friday morning and I felt awful!  I could hardly swallow and I just felt bad.  I decided that instead of being miserable all weekend that I would run to the clinic to see what was wrong.

Congratulations, the test was positive.  I had strep throat.  Which is crazy!  I don’t know where I got it.  They loaded me up with some antibiotics and a shot and we headed out of town.  I got a small cappuccino for the road to try to help ease the pain in my throat.

Once we got there, I just wanted to sleep so Jeremy took me to the hotel to check in before his games started.  We stayed at the Doubletree by Hilton.

They greet you just like they do on the commercials, with a hot chocolate chip cookie! The staff is extremely friendly and helpful, and check in is a breeze.

Walking in the front door, the cleanliness and modern design stands out.  The lobby is big and open and has a bar.  There are computers and TVs for the guests to use.

This hotel has an indoor pool, hot tub, and an awesome gym.  I had brought my running shoes and was planning on trying out my new insoles on the treadmill, but that didn’t happen.

I love the rooms because they are so spacious.  There is a living room area with a love seat, chair, and desk.  Then the bedroom area with a dresser, tv, bed, and closet.

The bed is my favorite part of the whole room. It is the most comfortable one I have ever slept on!  It is like sleeping on a cloud.  The mattress topper is so soft, and the bedding is even softer.  You just sink into it.

I also love the bathtub because it is huge!!  The picture doesn’t do it justice, it is really deep.

We went up to the room and I went straight to bed.  I slept for a couple of hours, and then got up and headed to the games.  Jeremy has to be there an hour before game time, so I dropped him off and headed to the mall.  I really needed to shop for some fall clothes, but I just didn’t feel like it.  The mall just had an H & M open up, so I was really excited about that.  But, it was packed full of people, so I didn’t stay in there very long.

I just walked around window shopping.  I only bought three things; which is shocking because I love to shop.  I bought a new Vera Bradley purse.  I’m really happy with this find because it was half off!

I was a trooper and sat through about 4 innings until I got too cold. Then, I slept in the car for a couple of hours until the games were over.

After the games, it was late and I still wasn’t feeling very good and the only thing that sounded good to me was breakfast.  We went to Denny’s and I ate some blueberry pancakes.

Saturday morning I woke up really early and felt amazing!  The medicine had finally kicked in and I felt great, and had a lot of energy! 

We went to breakfast at the hotel.

Our breakfast is always included in our room, and it is so good.  They have a small buffet with sausage, bacon, scrambled eggs, biscuits, hashbrowns, and gravy.  They also have some healthy options to choose from – fresh fruits and yogurt.  Plus, they have muffins and assorted pastries, English muffins, bagels, and toast.   And, they have cold cereals and oatmeal.

 Then we headed to Bricktown to the championship games.  The games were at the Bricktown Ball Park.  It is home of the Oklahoma City Dodgers, the minor league team of the LA Dodgers.

This is a huge honor to be selected to do the championship game.  There are only 6 umpires in the whole state that are picked.  I am so proud of my man!

He had a pretty exciting game.  There was a lot of scoring, which kept it interesting.  I thought he did a great job!

After the game, we headed to Norman to watch his cousin play little league football.  This was the first game we have been too, and it was fun!  His cousin was so cute in his football uniform, and he played so hard!  These are 10 and 11 year olds, and the team they were playing looked like they were all about 14 or 15.  So, our team lost but it was fun to see all the family.

On our way home, we stopped and ate dinner at Ted’s.  It is a Mexican restaurant, our favorite kind!

We were starving!  This restaurant has the best chips and salsa.  The setup also comes with cheese dip, and we tried the atomic salsa as well.  It is a jalapeno based salsa with avocado in it. (It’s in the middle)  It was spicy!  But, I really liked it.

We ordered a dinner to share.  It had one beef enchilada, two cheese enchiladas, and a taco.  This was my cheese enchilada after Jeremy took all of his off the plate.  We were so hungry that I forgot to take a picture before we dug in!

Dinner was so good, but I was really proud of myself for not overeating!  I tend to do that when we eat Mexican.  But, this time I stopped when I was full.  It was almost midnight by the time we got home.  I slept most of the way home, and we went straight to bed!  

Overall, it was a really fun weekend!

I Have an Addiction

I think I have a problem.  Or maybe it’s an addiction.  I have tried to fight it, and tried to get past it.  But the cravings just keep coming.  I think about it all day and I dream about it at night.  I seek out people who have the same problem.  The temptation is always there, and I just can’t say no.  I have no willpower at all.  When I try to quit it just makes it worse.  It’s all I think about until I have one.

I am being serious though.  I really think I have a problem with cookies.  I don’t care much for candy, and I hardly ever eat it.  I don’t like ice cream.  Donuts are a very special treat and I have these rarely (even though I love them!).  I can pass on cakes and pies, but with cookies I really just can’t.

Cookies are the only unhealthy treat that I keep in my house.  I have tried lots of different recipes for “healthier” versions of them and they are ok.  There is just no comparison to a fresh baked chocolate chip cookie.  It is like heaven when you bite into it.  I would consider myself a cookie connoisseur, or maybe I’m just a cookie snob.  I will only eat cookies that I know are good.  If it doesn’t look good, then I’ll pass.  I like all kinds too, but my favorite is chocolate chip.

Running Bucket List

I was inspired by Amy and Gideon over at Brits Run Disney to make a bucket list of races I want to do.  I have thought about this some before, but it never occurred to me to write it down.  Thanks guys! 

Here is my Running Bucket List: 

Nike Women’s Half Marathon

This is the race that I absolutely want to do the most!  I like that it is a race for only women.  Plus, I think it would be awesome to get a Tiffany’s necklace at the end of a race!

Las Vegas Rock and Roll 

I’ve never been to Vegas, and this would be the perfect way to see the strip for the first time! All of the Rock and Roll races that I have read about seem like so much fun, but I think I would enjoy Vegas the most. And, the medal is really cool!

Disney Princess Half Marathon 

There’s really not much to say about this one other than I just really want to run at the most magical place on Earth!  I really can’t imagine anything that sounds like more fun than this!

Bermuda Half Marathon 

I am all about the Caribbean, so this would be a good excuse to go on a mini vacation.  But, not only is this race a half marathon, they also have a Bermuda Triangle challenge.  3 races in 3 days – Friday night is a mile, Saturday morning is a 10k, and Sunday morning is the half marathon.  This would not only be a running challenge, but also a fun location.  You run right next to the ocean, so I’m sure the scenery will be beautiful.

Kauai Half Marathon 

Surely you can see a pattern here.  I’m all about the beach and running at the beach just makes it that much better!  This course is also next to the ocean so I can only imagine how beautiful it would be when the sun is just coming up.

Someday I will do these races!

In other running news, I have run three times this week with very minimal pain.  I was able to run 3 miles without pain, and only a little bit of soreness afterwards.   I’m thinking that is a good sign, and I will continue to take it easy and slowly add more miles.

I have a friend that swears by Herbalife products.  I tried the shakes several years ago, and could not get into them, but my friend kept insisting that I try their energy supplements.  So, I started using the N-R-G pills last year.

I really liked them at first.  I started taking them before long runs.  It worked like a gel, and gave me a boost of energy.  But, it seemed to wear off pretty quickly.  I also used them during the day when I needed a pick me up in the afternoon, or when I was having a hard time waking up in the mornings.  When I first started them, I could tell a little bit of a difference, but after taking them for awhile, they just didn’t work at all.  I also noticed that if I am tired, they are absolutely no help!    My friend said she had the same problem, and would be taking up to 4 of them a day and they still weren’t working.

She has now gotten me to try out the Lift-Off energy tablets.  These dissolve in water, and so far they are working much better than the N-R-G pills did.  I can tell a huge difference after I take one.

I was craving blueberry muffins yesterday, and not the boxed kind.  I wanted real, homemade, made from scratch muffins.  So, I made some.  This recipe is so simple and these muffins were delicious!  They were moist and were full of blueberry flavor.  It took me 10 minutes to prep them, and 30 minutes to bake.  I could hardly wait until they were cool to eat.  They made my house smell heavenly!

Preheat your oven to 375 degrees.  Spray a muffin tin with non-stick cooking spray.  You can use liners if you want, but spray those too.

In a bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, and 1 teaspoon salt.  Set aside.

In a mixer, beat together ½ cup (1 stick) of softened butter and 1 cup granulated sugar.  Beat until it is creamy.

Then add 2 eggs.  Add them 1 at a time and beat well.

Add 1 teaspoon vanilla extract and blend well.

With the mixer on low speed, add in half of the flour mixture.  Then add in a ½ cup of milk and the rest of the flour mixture.

Once this is combined, use a spatula to fold in 2 cups of blueberries.  Do this gently so you don’t break them. ( I used frozen, but thawed them first.  You can use fresh too.)

Fill the muffins to the top in the muffin tin.  I used an ice cream scoop to fill mine.  Then sprinkle them with sugar.

Bake them for 30 minutes or until the tops are golden brown.

Ingredients

  9. 2 cups fresh or frozen blueberries
  10. 3 tablespoons granulated sugar - for the tops of the muffins

  3. 3. In a mixer, beat butter and sugar together until creamy.
  4. 4. Add eggs, one at a time, beating well after each.
  5. 5. Add vanilla and beat until well blended.
  6. 6. With the mixer on low, mix in half of the flour, then half of the milk. Once incorporated mix in the rest of the flour and milk.
  7. 7. Use a spatula to gently fold in the blueberries.
  8. 8. Fill the muffin tin to the top, sprinkle with sugar.
  9. 9. Bake for 30 minutes or until the tops are golden brown.
