My grandma gave me a TON of fresh okra, and I wanted to cook it before it went bad. I love okra, but it’s not healthy fried and I can’t handle all grease. So, I found a recipe several years ago for roasted okra. I tried it and fell in love with it! Anytime I have fresh okra, I roast it. I have tried it before with frozen okra, but it doesn’t really taste the same. It’s very simple and doesn’t require many ingredients. You will need okra, olive oil, salt, and pepper. I cut up the okra into small pieces and put them in a bowl.
Then, I drizzle olive oil on them and sprinkle salt and pepper. I stir them to make sure they are all coated. I don’t know how much olive oil I use. I just start with a little bit and when you stir them, you can tell if you need more. You don’t want them drowned in it.
I cover a baking sheet in foil, so they don’t stick to the pan. I spread them out in a single layer.
Every 10 minutes I pull them out and stir them around to make sure they aren’t sticking and that all sides are cooking.
These taste just like fried okra, but they are so much healthier for you. Plus, they are easier to make and you don’t have a huge mess to clean up!
